Roasted Leeks with Parmesan Recipe

Ingredients

  • 2 large leeks
  • 2 tablespoons olive oil
  • teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • cup freshly grated Parmesan cheese
  • Chopped parsley for garnish (optional)

Directions

Step 1: Preheat the oven to 425F (220C).

Step 2: Trim the leeks by cutting off the root ends and the dark green tops. Quarter the leeks and rinse them thoroughly to remove any sand or grit. Pat them dry with a paper towel.

Step 3: Drizzle olive oil over the leeks and sprinkle with salt and pepper. Use your hands to ensure the leeks are evenly coated with the seasoning.

Step 4: Place the leeks cut-side down in a baking dish and roast for 20 minutes.

Step 5: After 20 minutes, carefully flip the leeks over so the cut side is facing up. Sprinkle the grated Parmesan cheese evenly over the top.

Step 6: Return the leeks to the oven and continue to roast for an additional 10 minutes, or until the leeks are tender and the cheese has melted.

Step 7: Garnish with chopped parsley, if desired, and serve.
