Ingredients
- 1/4 cup unsalted butter, plus more for greasing muffin tins
- 1/2 cup minced onion
- 1/4 cup minced jalapeo, seeded and white membranes removed, plus 12 thin slices for topping
- 2 large eggs, lightly beaten
- 1 cup buttermilk
- 1 cup plain yellow cornmeal

- 1 teaspoon taco seasoning, or to taste

Directions
Step 1: Preheat the oven to 375F (190C) and grease the cups of a 12-muffin tin with butter.
