Mediterranean Chicken Pitas Recipe

This simple and flavorful recipe combines marinated artichokes, creamy feta, and savory roasted chicken in a crispy pita pocket. Perfect for a quick lunch or dinner!

Ingredients

  • 1 cup marinated artichoke hearts, drained and chopped
  • cup crumbled feta cheese
  • cup thinly sliced green onions
  • 1 tablespoon lemon juice
  • 1 teaspoon salt
  • teaspoon ground black pepper
  • 2 (6 inch) whole wheat pita breads, split and toasted
  • 4 ounces roasted chicken breast, sliced

Directions

Step 1: Gather all your ingredients together.

Step 2: In a medium bowl, combine the marinated artichokes, crumbled feta cheese, sliced green onions, lemon juice, salt, and black pepper. Stir everything together until well mixed.

Step 3: Cut your toasted pita breads in half and carefully open the pockets.

Absolutely delicious and simple! The mixture seemed a bit dry for our liking, so I included a tablespoon of olive oil. I also threw in halved cherry tomatoes, just like in the photo. This dish is definitely going into my regular lunch lineup. Appreciate the recipe!

Review: July 18, 2021 The recipe did not mention tomatoes, but they were visible in the photo, so I decided to include them. I highly recommend adding tomatoes as they provide a delightful flavor and add a splash of color, enhancing the visual appeal. The savory artichokes complement the grilled chicken leftovers exceptionally well, and the sharpness of the feta cheese elevates this sandwich to a truly delicious level. We enjoyed this dish for lunch on Sunday, with each person enjoying half a pita in preparation for a big dinner.
