Heirloom Tomato Salad Recipe
Tomato Salad with Rosemary and Oregano
This refreshing tomato salad combines heirloom tomatoes with a simple yet flavorful dressing of olive oil, rice wine vinegar, and fresh herbs. Perfect as a side dish or a light appetizer, it is easy to prepare and quick to serve.
Ingredients
- 1/4 cup extra-virgin olive oil
- 2 tablespoons rice wine vinegar
- 1 sprig fresh rosemary, leaves removed and finely chopped
- 1/8 teaspoon dried oregano
- 3 large heirloom tomatoes, quartered
- 3 small heirloom tomatoes, quartered
- Kosher salt and ground black pepper, to taste
Directions
- In a large bowl, whisk together the olive oil, rice wine vinegar, finely chopped rosemary, and dried oregano until well combined.
- Add the quartered heirloom tomatoes to the bowl and toss gently until they are evenly coated with the dressing.
- Cover the bowl and refrigerate the salad for 10 to 15 minutes, allowing the flavors to meld and the salad to chill.
- Before serving, season with kosher salt and ground black pepper to taste. Toss the salad again to ensure the seasoning is evenly distributed.
Cooks Note
Heirloom tomatoes vary in size, so you may need to cut the larger tomatoes into six wedges and the smaller ones in half to achieve uniform pieces.
If you're looking for a different flavor profile, try grilling the heirloom tomatoes for a smoky, warm variation of this salad. Serve as a side dish for your next barbecue or casual meal.
