Kale Salad Recipe

Ingredients:

  • cup lemon juice
  • 1 tablespoon canola oil
  • 1 tablespoon olive oil
  • 1 teaspoon white sugar
  • teaspoon salt
  • teaspoon ground black pepper
  • 1 bunch kale, cut into bite-size pieces
  • 1 large tomato, seeded and diced
  • cup roasted sunflower seeds
  • cup dried cranberries

Directions:

  1. In a large bowl, whisk together the lemon juice, canola oil, olive oil, sugar, salt, and black pepper until well combined.
  2. Add the kale, tomato, sunflower seeds, and dried cranberries to the bowl.
  3. Toss everything together gently to ensure the ingredients are evenly coated with the dressing.
  4. Serve immediately, or refrigerate for 15-30 minutes to allow the flavors to meld together before serving.
