Broccoli Slaw Recipe

Broccoli Coleslaw with Ramen Noodles

Ingredients

  • cup olive oil
  • cup white sugar
  • cup cider vinegar
  • 2 (3 ounce) packages chicken ramen noodles, broken
  • 10 ounces broccoli coleslaw mix
  • cup sliced almonds
  • cup golden raisins (Optional)
  • cup sliced green onions
  • cup chopped green bell pepper

Directions

Step 1: In a small bowl, whisk together the olive oil, sugar, vinegar, and the seasoning packets from the ramen noodles.

Step 2: In a large salad bowl, combine the broccoli coleslaw mix, broken ramen noodles, sliced almonds, golden raisins (if using), sliced green onions, and chopped green bell pepper.

Step 3: Pour the dressing over the salad mixture and gently fold everything together until evenly coated.

Step 4: For best flavor, cover the salad and refrigerate for at least 2 hours before serving. Stir again before serving to ensure all ingredients are well mixed.

I thoroughly enjoyed this salad as a clever way to incorporate broccoli into your family's diet. A delightful twist on traditional ramen salads, the sweet, crunchy flavors were a hit. I gave it 4 stars because I halved the dressing recipe and used only one packet of noodles, which still provided enough moisture for the salad. While the dressing was slightly oily for my taste even with the reduction, I plan to adjust the oil-to-vinegar ratio in the future. Overall, thank you for the inspiration!

This recipe was simple to make and delicious. I rated it 4 stars because I felt it needed a little extra something - bacon. I followed the instructions closely but decided to enhance it by including 6 slices of chopped and fried bacon. Additionally, I threw in about a cup of small broccoli florets which really elevated the dish.

I followed this recipe but made some adjustments: I used Trader Joe's Broccoli Slaw mix (12 oz bag), omitted sugar in the dressing, skipped the ramen and ramen seasoning, and used Trader Joe's everyday seasoning mix instead. I substituted almonds with sunflower seeds, and omitted onions and green peppers. The salad turned out delicious, although the dressing to slaw ratio was a bit off (possibly due to omitting several ingredients), making it a bit more 'wet' than my usual preference. Despite that, I would definitely make this again!

This dish is always a hit at our family cookouts! This time, I had to make a few substitutions, using rice vinegar instead of the usual ingredient. I mixed it with some olive oil, a pinch of sugar, black pepper, and the Ramen noodle seasoning packet (Oriental flavor) before tossing it with broccoli slaw. I crushed the Ramen noodles and sprinkled them in, and swapped slivered almonds for unsalted sunflower seeds since I couldn't find almonds at the store. I left out raisins, as nobody in my family really enjoys them. I usually let the slaw sit overnight to really absorb the flavors. There are so many ways to adapt this recipe, and I usually just go by taste rather than exact measurements. My daughter loves this dish so much that I'm making a separate batch for her to enjoy while she's away! Everyone in my family (except my husband, who finds it strange) loves this dish. He hails from the South and had never heard of such a recipe until moving up North - he thinks it's a bit too unusual! :)

The salad was incredibly delicious, offering a perfect balance of textures and flavors. I gradually added sugar to the dressing, tasting it along the way. I ended up using less than the recommended amount, which worked out perfectly for our taste. I decided to throw in some leftover mandarin oranges, and they were a great addition. This salad is absolutely addictive – once you start, you won't want to stop eating it!
