Strawberry Chicken Salad
Ingredients
- cup mayonnaise
- 2 teaspoons lemon juice
- 1 teaspoon honey
- 2 teaspoons poppy seeds
- 2 cups chopped, cooked chicken
- cup sliced fresh strawberries
- cup pecan pieces
- 1 stalk chopped celery
- 2 stalks green onions, chopped
- 2 tablespoons chopped fresh parsley
- Salt and ground black pepper, to taste
Directions
- Gather all the ingredients for the salad.
- In a medium-sized bowl, combine mayonnaise, lemon juice, honey, and poppy seeds. Mix well.
- To the bowl, add chopped chicken, sliced strawberries, pecans, celery, green onions, and parsley.
- Gently toss everything together until evenly combined.
- Season with salt and pepper to taste.

Delicious! I have to admit that I took a shortcut and used bottled poppyseed dressing! Otherwise, followed the recipe exactly.

This recipe is fantastic as it is written, but it can easily be adjusted to suit your preferences or ingredients on hand. We decided to replace half of the mayonnaise with olive oil and threw in some bell peppers from our fridge. Additionally, we swapped pecans for walnuts. It's a wonderful recipe that offers great inspiration for trying out different variations.

I absolutely loved this salad! I had some leftover rotisserie chicken and an abundance of strawberries, so I decided to give this recipe a try. I followed the instructions closely, but had to substitute poppy seeds with celery seeds, which turned out to be a great choice. To my surprise, I found this combination even more delicious than the classic version with cranberries and pecans.
