Mom Moak's Chicken Noodle Soup Recipe

- 1 tablespoon vegetable oil
- 2 stalks celery, sliced
- 2 carrots, sliced
- 1 onion, chopped
- 4 (10.5 ounce) cans chicken broth
- 4 baking potatoes, peeled and diced
- teaspoon poultry seasoning
- pinch dried thyme
- 2 cups shredded cooked chicken
- 2 cups egg noodles
- 1 cup evaporated milk
Directions
Step 1: Heat vegetable oil in a stock pot over medium heat. Add the sliced celery, carrots, and chopped onion. Cook and stir the vegetables until they become tender, which will take about 8 to 10 minutes.
Step 2: Once the vegetables are tender, add the chicken broth, diced potatoes, poultry seasoning, and thyme. Bring the mixture to a simmer and continue cooking until the potatoes are fully cooked through, approximately 15 minutes.
Step 3: Stir in the shredded chicken, egg noodles, and evaporated milk. Continue cooking until the noodles are tender and cooked through, which will take about 7 to 10 minutes.
