Tomato Fideo Soup
This hearty and flavorful tomato fideo soup is quick to prepare and perfect for a cozy meal. It combines tender fideo pasta with a savory tomato broth, topped with fresh cilantro for an extra burst of flavor.
Ingredients
- 1 (14.5 ounce) can diced tomatoes
- 1 small onion, chopped
- 1 large clove garlic, coarsely chopped
- 2 tablespoons olive oil
- 1 (7 ounce) package fideo pasta, uncooked
- 3 (14.5 ounce) cans chicken broth
- Coarse salt and freshly ground black pepper, to taste
- 1 tablespoon chopped fresh cilantro
Directions
Step 1: Place the diced tomatoes, chopped onion, and garlic in a blender. Pulse a few times to get the mixture moving, then blend until smooth, about 30 seconds to 1 minute.
Step 2: Heat olive oil in a skillet over medium-low heat. Stir in the fideo pasta and fry gently, stirring often, until the pasta is golden brown, about 2 to 5 minutes. Remove from heat once done.
Step 3: Pour the blended tomato mixture into a large saucepan. Add the chicken broth and the fried fideo pasta to the pan. Bring the mixture to a boil, then reduce the heat to medium-low and simmer for 7 to 8 minutes, or until the noodles are tender.
Step 4: Season the soup with salt and pepper to taste. Stir in the chopped cilantro and cook for an additional minute or until warmed through.
Recipe Tip
If you don't have fideo pasta, you can substitute it with angel hair pasta broken into small pieces.
