Crabmeat Bisque Made Easy Recipe
Ingredients:
- Cooking spray
- 3 tablespoons butter
- cup diced celery
- cup minced onion
- teaspoon paprika
- teaspoon seafood seasoning (such as Old Bay)
- teaspoon ground thyme
- teaspoon kosher salt (or to taste)
- 1 teaspoon ground white pepper
- cup rice flour
- 1 cup seafood stock (or more as needed)
- 1 pint half-and-half
- 1 pint heavy whipping cream
- cup milk (Optional)
- 2 cups cooked crabmeat
Directions:
Step 1: Spray a stockpot with cooking spray.
Step 2: Melt butter in the prepared stockpot over medium heat. Add the diced celery and minced onion, cooking and stirring until the onion becomes translucent, about 5 minutes.
Step 3: Stir in paprika, seafood seasoning, thyme, salt, and white pepper. Continue to cook for another minute to allow the spices to bloom.
Step 4: Whisk the rice flour into the vegetable mixture until it is smooth and dissolved, ensuring there are no lumps.
Step 5: Pour the seafood stock into the pot, stirring to combine. Gradually add the half-and-half, heavy cream, and optional milk. Bring the mixture to a simmer and reduce the heat to low. Let it cook, stirring occasionally, until the bisque thickens, about 15 minutes.
Step 6: Add the cooked crabmeat into the bisque. Simmer for an additional 5 minutes, allowing the crabmeat to heat through and absorb the flavors.
Step 7: Once the bisque has reached the desired thickness and temperature, taste and adjust the seasoning if necessary. Serve hot, and enjoy!
Cooks Note: You can substitute all-purpose flour for the rice flour, use chicken or vegetable stock instead of seafood stock, and replace crab with shrimp or lobster. If desired, you can also add chopped potatoes and carrots to the bisque for extra texture and flavor.
