Tomato, Basil, and Corn Salad with Apple Cider Dressing Recipe

Tomato, Basil, and Corn Salad with Apple Cider Dressing Recipe

Ingredients

  • 2 cups frozen corn kernels, thawed
  • 1 pint grape tomatoes, halved
  • 10 fresh basil leaves, chopped
  • 3 tablespoons extra-virgin olive oil
  • 1 tablespoon apple cider vinegar
  • teaspoon salt (optional)

Directions

  1. In a large bowl, combine the thawed corn, halved grape tomatoes, and chopped basil leaves.
  2. Add the olive oil, apple cider vinegar, and salt (if using), and toss everything together until the ingredients are evenly coated.
  3. Serve immediately or, if preparing ahead of time, let the salad sit at room temperature for about 30 minutes. This allows the flavors to meld and the corn to thaw completely, eliminating the need for defrosting ahead of time.
