Mom's Chicken Pot Pie Recipe

Chicken Pot Pie

Ingredients

  • cup butter
  • cup chopped onion
  • cup all-purpose flour
  • teaspoon salt
  • teaspoon ground black pepper
  • 1 cups chicken broth
  • cup milk
  • 2 cups chopped cooked chicken
  • 1 (14.5 ounce) can peas and carrots
  • (15 ounce) can whole new potatoes, drained
  • 1 (14.1 ounce) package double-crust pie pastry, thawed

Directions

  1. Preheat the oven to 425F (220C).
  2. Melt the butter in a large skillet over medium heat. Add the chopped onion, flour, salt, and pepper, and cook, stirring frequently, until the onion becomes translucent, about 5 minutes.
  3. Pour in the chicken broth and milk. Bring the mixture to a boil, and cook for about 1 minute, or until the sauce slightly thickens.
  4. Remove the skillet from heat and stir in the chopped chicken, peas and carrots, and drained potatoes. Mix well to combine.
  5. Place one sheet of pie pastry into the bottom of a 9-inch deep-dish pie pan, pressing it gently into the pan's corners.
  6. Carefully pour the chicken mixture into the pie shell, spreading it out evenly.
  7. Top with the remaining sheet of pie pastry. Press the edges together to seal the pie. Use a knife to cut several small slits in the top pastry to allow steam to escape during baking.
  8. Place the pie on a baking sheet and bake in the preheated oven for about 30 minutes, or until the crust is golden brown.
  9. Remove the pie from the oven and allow it to cool for 15 to 20 minutes at room temperature. This will help the filling thicken before slicing.

Came out absolutely perfect. Winter comfort food. If you're not too bothered about calories you should try this: I dismissed the milk and the chicken broth and instead added a can of Campbell's condensed chicken soup with a cup of water, the mixture was thick and creamy and even more chickeny! Really nice touch. This pie lasted me and my boyfriend dinner and 2 lunches for work the next day! I will definitely be making this again and inviting people over to try :p

We absolutely loved this! I wish I had taken a picture, but it was eaten so quickly! Here are my changes I did based on reviews, and my notes! After I made the flour/butter roux and it was ready, I added in 1 C of milk, a splash of chicken broth and a can of cream of chicken soup. Once all combined, I added a bit more chicken broth until it was a consistency that i liked! I used rotisserie chicken (2.5 cups) I boiled the veggies and potatoes in chicken broth for 3 minutes or so. I used that broth in the above. It gave those items a nice flavor! I added thyme and poultry seasoning (1 tsp of each) to the mixture I put a few pats of butter on top before placing the top crust. I did an egg wash on the base crust and on the top of the pie after baking. It made the crust nice and firm on the bottom (not soggy) and make the top of the crust have a beautiful shine. After baking 10 mins, I put a pie crust saver on the crust to prevent over browning. Its worth it to keep one of these in your kitchen if you make anything with crust!

I made it as a pan casserole. Instead of potatoes, I used 1/2 inch cut asparagus that I microwaved for 1 minute. I also cut fresh carrots into half circles and microwaved them for 2 minutes. I added a can of LeSeur Peas. Followed the recipe for the rest and cooked it for about 20 minutes on the stovetop. Served it over egg noodles. Important note: I purchased a $4.99 Costco Rotisserie Chicken and used the white meat for the recipe. It comes to about 4 cups of chicken so I doubled the recipe. I can get over 8 meals from one chicken. I have been making this for at least 3 years and it is a family and friend's favorite.

I added 2 cloves of garlic, 1/2 cup diced celery, used a whole chopped onion and more salt and pepper and 1 tsp thyme. I also used a fresh chopped carrot and a chopped potato. I cooked the carrot and potato together first then added them. I used frozen peas. I used frozen pie crusts. Very tasty and easy. It really needs the thyme though.

Gave it a 4, but made it into a fabulous 5 with a few changes... Baked the bottom crust for 5 minutes before adding the mixture - made it crisp and not soggy Used a can condensed cream of chicken & mushroom soup, 1 cup of water and 1/2 cup of milk Added herbs per other suggestions Cubed one large potato and 3 large carrots which I added to the boiling mixture Used one small can of peas Made the guts in the morning, then refrigerated, so 45 minutes in the oven. Was perfect and will definitely make again!

So easy to make and came out delicious! I don’t have a deep pie dish but used a regular one and it was fine. I also used fresh carrots, potatoes and frozen peas because that’s what I had and it was fine. I will definitely be making this again and again! So good!

(2-Chicken Pot Pies) I made it. I used Carrots only-No peas/Wife is not a fan of peas. I used a can of Cream of Chicken Soup and the Juice of a can of Chicken Noodle soup as well as some Chicken Stock to make the sauce with the Onions, Butter etc. just as the recipe made it (Electric Oven). I baked the pie at 400F for 25 Minutes and 425 for 25 Minutes or so. I basted the top crust lightly with Melted Butter. Other than that I followed the recipe. It turned out awesome We polished off 1 pie just my wife and I We have the other pie left for Wednesday night!

I made this with a few modifications suggested in other reviews. I added sliced celery and sautéed it along w/ the onion. I also substituted the broth w/ a can of cream of chicken soup and a can of milk and a teaspoon of garlic herb seasoning. It was creamy & flavorful. My family LOVED it and asked me to make sure to save it so we could make it again. I would add a little more liquid either milk or broth to keep it from getting too thick. Definitely recommend.

I've made this recipe twice now, and my husband and I both love it - with some modifications: 1) per reviewer suggestions, I added 1/2 tsp each dried sage and thyme; 2) used frozen peas and fresh carrots and potatoes, which I pre-cooked (3/4 cup each); 3) pre-baked bottom crust about three minutes; 4) upped the salt to 3/4 tsp. The four-star rating is because I modified the original recipe; wiith these changes I'd rank it five stars.

Easy to follow recipe. I liked to see all the reviews of what people added for their own style of pie. The only thing I added was more chicken stock (1 cup) and 1/2 cup more of milk as I live at 7,300ft in altitude and liquids evaporate quickly at this altitude. Thanks for the recipe.

This was good but I do not care for the canned vegetables. Instead I used frozen mixed vegetables and skipped the potatoes, personal preference. Thank you for the recipe.

Amazing recipe! I switched out the broth for campbell's cream of mushroom soup. It was a huge hit and I'm making it again because it was that good!!
