Southwest Chicken Salad Recipe

Ingredients

  • 1 avocado, peeled, pitted, and chopped
  • cup sour cream
  • 1 tablespoon mayonnaise
  • 1 tablespoon water
  • 2 tablespoons freshly squeezed lime juice
  • (1 ounce) packet ranch dressing mix
  • teaspoon salt
  • 2 (6 ounce) skinless, boneless chicken breast halves
  • 1 tablespoon olive oil
  • 1 tablespoons fajita seasoning
  • 1 medium ear corn, husk and silk removed
  • 1 medium head romaine lettuce, chopped
  • cup halved grape tomatoes
  • 1 (15 ounce) can black beans, rinsed and drained
  • small red onion, sliced into petals

Directions

Step 1: Gather all the ingredients and set them aside for easy access.

Step 2: In a food processor, combine the avocado, sour cream, mayonnaise, water, lime juice, ranch dressing mix, and salt. Blend until the mixture is smooth and creamy. Refrigerate until ready to use.

Step 3: Place the chicken breasts in a bowl. Add olive oil and fajita seasoning. Toss the chicken to ensure it is evenly coated with the seasoning mixture.

Step 4: Preheat the grill to medium-high heat and lightly oil the grill grate. Place the chicken breasts and corn on the grill. Grill the chicken, turning once, until the chicken is no longer pink in the center and the juices run clear (about 10 minutes per side). For accuracy, use an instant-read thermometer. The internal temperature of the chicken should reach 165F (74C). Grill the corn until tender and slightly charred.

Step 5: Transfer the grilled chicken and corn to a cutting board. Let the chicken rest for a few minutes before slicing it thinly.

Step 6: While the chicken rests, divide the chopped romaine lettuce, halved grape tomatoes, black beans, and red onion petals between two serving plates.

Step 7: Cut the grilled corn off the cob and divide the kernels evenly between the two plates.

Step 8: Slice the grilled chicken breast and arrange the slices on top of the salad ingredients. Drizzle with the chilled avocado dressing you prepared earlier.

Step 9: Serve immediately and enjoy your delicious and healthy salad!
