Slow Cooker, Easy Baked Potato Soup Recipe
Ingredients
This recipe was developed at its original yield. Ingredient amounts are automatically adjusted, but cooking times and steps remain unchanged. Note that not all recipes scale perfectly.
- 10 red potatoes, cut into cubes
- 3 tablespoons all-purpose flour
- cup real bacon bits
- 1 small red onion, chopped
- 1 clove garlic, minced
- 2 tablespoons chicken bouillon granules
- 1 tablespoon ranch dressing mix
- 2 teaspoons dried parsley
- 1 teaspoon seasoned salt
- teaspoon ground black pepper
- 3 cups water
- 1 cup half-and-half
- cup shredded Cheddar cheese, or to taste
- cup chopped green onion, or to taste
Directions
- Place the cubed potatoes at the bottom of your slow cooker crock.
- Evenly scatter the flour over the potatoes and toss to coat them well.
- Top the potatoes with bacon bits, chopped red onion, minced garlic, chicken bouillon, ranch dressing mix, parsley, seasoned salt, and black pepper.
- Pour the water into the slow cooker, ensuring all the ingredients are submerged.
- Cover and cook on Low for 7 to 9 hours until the potatoes are tender and the flavors are well combined.
- After the cooking time is up, pour in the half-and-half and continue to cook for an additional 15 minutes.
- Serve hot, garnished with shredded Cheddar cheese and chopped green onions.
Recipe Tip
You can also cook this soup on High for 4 to 5 hours if youre short on time.

I am the writer of this recipe, and am so glad that others have enjoyed it! I wanted to mention a few things. First, please use REAL bacon crumbles, NOT imitation bacon bits. Hormel makes these, as do others. I can't imagine this would be the same with imitation bacon bits. The dry ranch dressing mix adds a great amount of flavor, so don't skip it. However, if you don't have dry ranch dressing mix, you can make your own (below). It makes a large amount, but is great for so many things (on meat, in soups/chili, burritos, etc.) To make it, simply combine and store in an airtight container: 1/4 cup dried chives 1/4 cup dried parsley 1/4 cup dried dill weed 2 tablespoons garlic powder 2 tablespoons onion powder 1 tablespoon salt 1 tablespoon ground black pepper Another variation my family enjoys is adding 1/2 cup-1 cup of Velveta Cheese. Also, for clarification, the 10 red potatoes are small-medium sized. If you buy the large ones, that are about the size of the palm of a hand, I would significantly cut back the number.

I wasn’t excited about trying this recipe because I’m not a big soup person but my pregnant daughter INSISTED on homemade potato soup so I chose this recipe and WOW! I doubled the recipe because my grandma taught me that “nobody leaves the table hungry” and when I tell you that there was less than one full bowl left after dinner I’m not exaggerating ONE BIT! The only things I did differently was to fry and crumble my own bacon and replaced the water and bullion with chicken broth. It is so good that it is now in our rotation! Thanks for such an easy and DELICIOUS recipe!

10/27/23- I need to cut the potatoes a bit smaller next time; I used 12 ounces of real bacon crumbled (cooked on a sheet pan 400 for 15 minutes); 4 garlic cloves, (goya bouillon granules; hidden valley ranch dressing). Otherwise followed recipe. It was a 'chowder' and very, very delicious. Great leftover on day 2, 3.

You need to take a cup of the potatoes and blend it with some milk, then pour back into the soup for a heartier soup. I also add 2 diced leeks for more depth. Changed water to chicken broth.

Made on stove top in my 6.5qt Dutch Oven per recipe ingredients. This is a great tasting recipe & simple to make. What I find interesting though is the fact that nobody mentions adding some good smoked andouille sausage to this soup. The GOOD andouille from a butcher shop that smokes their own meat & sausages. The smoky flavor of the sausage adds another layer of flavor & the sausage itself kicks it up another notch. I slice some in quarter inch pieces & some smaller pieces to really let the smokiness come through. Would have given it a 5 but just thought it was missing the sausage. So much better with it.

I am always looking for inexpensive, quick prep dinners for our 4 adult family. We all have different tastes, different work hours, different needs. This CrockPot Baked Potato Soup Recipe is perfect for all of us! Easy preparation, inexpensive ingredients. Everyone had seconds. Toppings of Cheddar Cheese, more bacon, green onions, and a squirt of sour cream. This is a definite add to our dinner rotation. Usually Sundays we make soups or stews in the colder months. This fits in. My only criticism is there is a middle flavor that's missing. I know it is not salt, nor pepper. Another review suggests smoked sausage, perhaps next time I will add some smoked paprika. Awesome none the less!! We used big and small red potatoes, I should've cut them into smaller cubes. Realizing some were not as tender as I would like, I turned the heat to high for the last hour, and added a bit more water. This worked well. I didn't want "Mashed Potato Soup", otherwise I would have added leeks.

My husband wants this again. I followed some tweaks of the other reviewers. I used 2 cans chicken broth and one can of water because no bouillon. I thickened with instant mashed potatoes. I also added a 12 oz ham steak half way through cooking. We topped with cheese, scallions, bacon and sour cream. It was delicious.

This is a hearty flavorful potato soup. I made it as directed, with the exception of mashing the potatoes before adding the cream since we prefer a thicker soup consistency. And, I used real bacon with the grease. Definitely cut back on the salt. I would start with 1/4 tsp and taste test. The bacon adds plenty of saltiness. All in all, an easy, warm winter soup.

Followed the recipe exactly. Best potato soup I've ever had. It's creamy but not glue-thick. Bursting with flavor. I didn't know how much bacon would crumble to make 3/4 cup so I cooked one-half pound. Perfect.

Excellent recipe! I made the adjustments to make 6 servings, because it is spectacular as a leftover. I also increased the ranch seasoning to 1 packet and 1 tablespoon. After frying my REAL bacon, I saved the fat, and sautéed the garlic (I used a tsp of minced in a jar) and onion in it until the onion was translucent, but not quite cartelized. Next, instead of water I used boxed chicken broth. In my crockpot on high, it only takes about 3 hours or so. Topped with the bacon (which remains crunchy, but you get the bacon flavor from the sautéed onion/garlic) and some shredded sharp cheese - Fabulous.

Doubled the recipe, then in step 4, cooked for 10 minutes on high in the Instant Pot, then five more minutes with the half-and-half. Tasted absolutely delicious!

I had to thin this soup with milk way too thick. Plus I added 3 cloves of garlic to boost flavour and I like garlic. Will be having for lunch to day.

This was super easy to put together. In honesty I used left over white potatoes from my garden and didn't have half & half but made do with what I had. This has multi layers of flavor that are hard to distinguish the source of. I think the Ranch adds a lot. This was the perfect companion for the frigid weather we are experiencing locally. I'll definitely make again and maybe even use red potatoes.
