Grilled Chicken Caesar Salad with Gouda

Ingredients:
- cup Caesar salad dressing
- 3 tablespoons orange juice
- 2 (5 ounce) skinless, boneless chicken breasts, cut into strips
- 1 tablespoon canola oil
- 2 tablespoons chopped fresh chives
- 2 tablespoons chopped fresh parsley
- 1 tablespoon chopped fresh tarragon
- Salt and freshly ground black pepper, to taste
- 1 head romaine lettuce, shredded
- cup croutons
- 4 slices bacon, cooked and crumbled
- 4 ounces grated Gouda cheese
Directions:
- Preheat an outdoor grill to medium heat and lightly oil the grate.
- In a large serving bowl, mix the Caesar salad dressing and orange juice. Set aside.
- Coat the chicken strips with canola oil. Sprinkle with chives, parsley, and tarragon. Season with salt and pepper.
- Place the chicken strips on the preheated grill. Close the lid and cook for 7 to 10 minutes, or until the chicken is no longer pink in the center and the juices run clear. The cooking time may vary depending on the thickness of the chicken strips.
- While the chicken is grilling, add the shredded romaine lettuce, croutons, crumbled bacon, and grated Gouda cheese to the bowl with the dressing mixture. Toss well to combine.
- Once the chicken is cooked, remove it from the grill and place it on top of the salad. Serve immediately while the chicken is still hot.
Cook's Note: You can use either homemade or store-bought Caesar dressing. If preferred, substitute Parmesan cheese for Gouda.
