Spicy Tomato Bisque with Grilled Brie Toast Recipe

Grilled Brie & Tomato Soup Sandwiches
Ingredients
- 4 ounces Brie cheese
- 4 slices rye bread
- 1 (28 ounce) can tomato puree
- teaspoon red pepper flakes
- 1 teaspoon freshly ground black pepper
- teaspoon dried basil
- teaspoon white sugar
- cup milk
- 4 ounces cream cheese, cubed
- 2 tablespoons chopped fresh basil leaves (Optional)
Directions
- Preheat the oven or toaster oven to 400F (200C).
- Spread Brie cheese evenly on two slices of rye bread and top with the remaining slices to form sandwiches. Place the sandwiches on a baking sheet.
- Toast the sandwiches in the oven for about 8 minutes, turning them halfway through for even toasting. Once toasted, remove from the oven, cut each sandwich in half, and set aside.
- In a medium saucepan over medium heat, combine the tomato puree, red pepper flakes, black pepper, basil, and sugar. Stir well and bring the mixture to a simmer. Let it cook for 10 minutes, stirring occasionally.
- Once the sauce has simmered, whisk in the cream cheese until fully incorporated and smooth. Stir in the milk and heat through, but do not bring to a boil.
- Stir in the fresh basil leaves, if using, and remove the saucepan from the heat.
- To serve, place each sandwich half in a separate bowl. Ladle the hot tomato soup over the sandwich halves, ensuring they are fully covered with the soup.
- Serve immediately and enjoy!
