Spicy Tomato Bisque with Grilled Brie Toast Recipe

Grilled Brie & Tomato Soup Sandwiches

Ingredients

  • 4 ounces Brie cheese
  • 4 slices rye bread
  • 1 (28 ounce) can tomato puree
  • teaspoon red pepper flakes
  • 1 teaspoon freshly ground black pepper
  • teaspoon dried basil
  • teaspoon white sugar
  • cup milk
  • 4 ounces cream cheese, cubed
  • 2 tablespoons chopped fresh basil leaves (Optional)

Directions

  1. Preheat the oven or toaster oven to 400F (200C).
  2. Spread Brie cheese evenly on two slices of rye bread and top with the remaining slices to form sandwiches. Place the sandwiches on a baking sheet.
  3. Toast the sandwiches in the oven for about 8 minutes, turning them halfway through for even toasting. Once toasted, remove from the oven, cut each sandwich in half, and set aside.
  4. In a medium saucepan over medium heat, combine the tomato puree, red pepper flakes, black pepper, basil, and sugar. Stir well and bring the mixture to a simmer. Let it cook for 10 minutes, stirring occasionally.
  5. Once the sauce has simmered, whisk in the cream cheese until fully incorporated and smooth. Stir in the milk and heat through, but do not bring to a boil.
  6. Stir in the fresh basil leaves, if using, and remove the saucepan from the heat.
  7. To serve, place each sandwich half in a separate bowl. Ladle the hot tomato soup over the sandwich halves, ensuring they are fully covered with the soup.
  8. Serve immediately and enjoy!
