Warm Dijon Potato Salad Recipe
Ingredients

- 5 red potatoes
- cup reduced-fat mayonnaise
- 2 tablespoons grated Parmesan cheese
- 1 tablespoons Dijon mustard
- 4 teaspoons cider vinegar
- teaspoon cayenne pepper
- teaspoon salt
- teaspoon ground black pepper
- teaspoon paprika
- red onion, thinly sliced
- 2 green onions, chopped
Directions
Step 1: Gather all the ingredients and prepare everything for cooking.
Step 2: Place the potatoes into a large pot and cover them with salted water. Bring the water to a boil.
Step 3: Once boiling, reduce the heat to medium-low, cover the pot, and simmer the potatoes until tender. This should take around 20 minutes.
Step 4: Drain the cooked potatoes and cut them into cubes.
Step 5: In a large mixing bowl, whisk together the mayonnaise, grated Parmesan cheese, Dijon mustard, cider vinegar, cayenne pepper, salt, black pepper, and paprika.
Step 6: Add the cubed potatoes, sliced red onion, and chopped green onions into the bowl with the dressing. Gently toss everything together until the ingredients are well combined.

Nice little kick to this potato salad. I made this as written and hubby liked it but said it could use olives, pickles and celery - the things I normally put in potato salad. He did however devour a huge serving, so he must have liked it. :) Thanks MommyKirsten.

We love this recipe! I don't even measure anything that goes into it and it always turns out fabulous! I cut the potatoes to cook in salted water. Once tender I drain and put in bowl and toss with vinegar and I add pressed garlic. Then I add the Dijon. We like "tangy" so I prefer to always add the vinegar while the potatoes are hot to absorb the flavor. While it's slightly cooling, I cut and add the onions and the cheese with seasonings. Mayo goes in last and we've eaten it warm and cold and it is always a big hit! Sometimes I add chopped celery if we are going to serve it cold, just for the added flavor and crunch. Make it your own and enjoy!!!

This recipe was a great base, I tweaked it slightly by smoking the potatoes to add a bit of flavor, as well as 3 strips of well done crushed bacon strips.

Made this and it was great! Substituted half sour cream for half the mayo. Also, added three chopped/sauteed stalks of celery. Superb!

I used Idaho potatoes, balsamic vinegar & a few dashes of hot sauce ( since I didn't have cayenne pepper). Added chopped egg and celery. Given all the wonderful ratings, and how tasty this was cold, I doubled the recipe and was oh so glad I did. Served with smoked sausage and home made apple sauce. Decided to cube the potatoes and cooked in the micro to avoid having to handle cutting them while hot. Worked like a charm!

I doubled the recipe mostly except for the mayo. I used 3/4 cup mayo and only 3 teaspoons of cider vinegar and only one tspn of dijon mustard. I feared a tart tasting salad. But this was GREAT!!! I can't wait for a pot luck so I can bring this dish. It is so creamy with the red potatoes and the parmesan cheese. I think it will be just as good cold as well. Yum O!

This potato salad is amazing! Lots of flavor and a little kick from the cayenne. I used baby yellow potatoes, roasted and quartered, sauteed leeks instead of onion, added some dill and used half mayo, half Greek yogurt with a handful of scallion tops to finish it off. Even though I modified for my tastes and ingredients I had on hand, I think this would be excellent exactly as written.

I used whatever potatoes I had on hand-white ones. Cut them into bite sized pieces, covered with cold water, brought to rolling boil then cooked for 8 minutes. Doubled the dressing except used listed amount for cayenne. Used yellow mustard, it is what I had. Finely chopped about 5 stalks of celery, 1 small to medium onion & 1 yellow pepper & added to mixed up dressing. Skipped green onions as I did not have any on hand. Added drained, warm potatoes to all of the above. Colourful & tasty. Well worth making & will make again. Thanks for the recipe!

This is probably my favorite potato salad. I use the baby potatoes (2 bags), double the amount of dressing, and it's perfect! I also cut down on the cayenne a bit because I do not have a high spice tolerance. Will always re-make this :)

This was such an interesting flavor! I've never had another potato salad quite like it. It was a bit spicy and tangy. Good warm or cold. The one caveat I had that prevented my giving it 5 stars was that the ratio of sauce to potato was off. There was about twice as much sauce as potatoes so I definitely think the potatoes could be doubled. Other than that; near perfect.

This is a fantastic, flavorful recipe! I used half dijon/spicy brown mustard for an extra kick. My only complaint is that the onions are a bit overwhelming. Next time I will chop them finely instead of slicing them, add some eggs and a little celery for crunch.

I didn't have cider vinegar so I used white with a splash of balsamic. Also substituted garlic for parm. It was an excellent salad.
