Split Pea Soup

Ingredients:

  • 1 pound dried split peas
  • 1 stalk celery, diced
  • 2 large carrots, peeled and diced
  • 2 (14.5 ounce) cans low-fat, low sodium chicken broth
  • 3 cups water
  • Salt and pepper to taste

Directions:

  1. Rinse the split peas thoroughly and pick through them to remove any debris.
  2. In a large pot, combine the split peas, diced celery, carrots, chicken broth, and water.
  3. Bring the mixture to a boil over medium-high heat.
  4. Once it starts boiling, reduce the heat to low, cover the pot, and let it simmer for 1 to 2 hours, until the peas have fallen apart and the soup has thickened.
  5. Season the soup with salt and pepper to taste just before serving.
