Split Pea Soup without Pork Recipe

Split Pea Soup
Ingredients:
- 1 pound dried split peas
- 1 stalk celery, diced
- 2 large carrots, peeled and diced
- 2 (14.5 ounce) cans low-fat, low sodium chicken broth
- 3 cups water
- Salt and pepper to taste
Directions:
- Rinse the split peas thoroughly and pick through them to remove any debris.
- In a large pot, combine the split peas, diced celery, carrots, chicken broth, and water.
- Bring the mixture to a boil over medium-high heat.
- Once it starts boiling, reduce the heat to low, cover the pot, and let it simmer for 1 to 2 hours, until the peas have fallen apart and the soup has thickened.
- Season the soup with salt and pepper to taste just before serving.
