Hot Water Cornbread Recipe

Cook Time: 5 minutes

Ingredients:

  • 1 cup cornmeal
  • 1 teaspoon salt
  • 1 teaspoon white sugar
  • cup boiling water
  • 1 tablespoon bacon grease
  • 1 cup bacon grease, or as needed

Directions:

  1. Gather all ingredients and set them aside for easy access.
  2. In a medium-sized bowl, combine the cornmeal, salt, and sugar.
  3. Slowly pour in the boiling water and add 1 tablespoon of bacon grease. Stir the mixture until the bacon grease has completely melted into the cornmeal.
  4. Heat a large skillet over medium heat and pour in enough bacon grease to cover the bottom of the pan to a depth of about inch. Heat the grease until it reaches 375F (190C).
  5. While the oil is heating, shape the cornmeal mixture into 12 small, flattened balls, using a heaping tablespoon to measure each portion.
  6. Once the bacon grease is hot, carefully drop the cornmeal balls into the pan. Fry them, turning once, until they become crisp and golden brown, which should take about 5 minutes.
  7. Once fried, transfer the fritters to a paper towel-lined plate to drain excess grease.
  8. Serve the fritters warm and enjoy!

Recipe Tip:

You can substitute shortening for the bacon grease in the batter if you prefer a different flavor or texture.

Quick and easy. These would go well with ham or fried fish or chicken as well as being a quick hot breakfast. The first batch I made, I forgot to add the shortening and they turned out just as good as the second batch with the shortening, so I'll be omitting the shortening from now on. They are a bit too salty, but cutting the salt in half makes them too bland for eating without syrup. Next time I'll try 3/4 teaspoon salt. I couldn't form little flatten balls, so I just dropped the batter by heaping spoonfuls onto a well-oiled skillet (I found that an eighth inch of oil worked as well as a half inch) They cook quickly and also burn quickly, so keep a close eye on the frying process.

Variation: I added Onion Powder and used Irish Butter and EVOO in my skillet. Turned out perfect for me... crispy edges and tastes great!! I added Onion Powder because I'll be having a some with my red beans and turkey necks over rice that I prepared earlier today!!!

I have no idea how you got these to form into balls. I followed the instructions (except I substituted butter for lard), and it was just too grainy to make into balls. Ended up adding about 1/2 c. of flour, one egg, and a TSP of baking powder, and they turned out quite good. Tasty! Maybe the original recipe used self-raising cornmeal?? That kind is uncommon in my part of Canada.

I didn't use cornbread mix. I used plain corn meal Cornbread mix has salt and flour in it. I also cut back on the water just a little and use milk. It helps it brown when not using sugar. I also add bacon grease to fry it in as it gives it the flavor I was used to growing up. My mother in law used to fry these in bacon grease only. She would butter them the minute they come out of the skillet and let the butter melt on the hot cornbread. Delicious.

I followed all ingredients, however, I tried it in an air fryer. Not sure how thin they are supposed to be they turned out VERY crispy as I sprayed pam on both sides instead of frying in oil. Set air fryer at 400 degrees and cooked 5 minutes each side. With this recipe I made 8 medallion sized out of one batch.

This is a wonderful recipe. I did add self-rising flour 1/4 cup, cut salt to 1/2 tsp. also for everyones benefit if you wet your hands prior to rolling your patties out or corn balls they will not stick to your hands. I also used cocoanut oil for frying. Suppose to be healthier for you.

I'm a GRITS born in NOLA! (Girl Raised In The South) My gr'grand mother fixed this all the time. Especially after frying fresh caught fish using the left over cornmeal. Have to use bacon grease to get the real flavor.

I used olive oil instead of bacon fat and artificial sweetener for sugar. Actually my first attempt at age 80. Lol. I always relied on my mom or my best friend to make this. Mom deceased friend can’t remember how. I’m on my own. Lol

Pretty good. I read others reviews and only used 1/2 teaspoon salt and about 1 1/2 teaspoon sugar. I didn't use 1/2 inch oil ...i used less and after i removed them from the oil and let them set for about 2 minutes...i drizzled them with honey...so good...it didn't make 12 "cakes"...just 9 really small ones...

I made the following changes: add a little flour and use equal amounts of self-rising meal and you do not have to worry about the salt; my mother would wait until the batter cooled and added an egg with a little sugar; fried the batter in bacon fat. Just keep practicing u till you get it the way you want them.

It will definitely be a staple in my house. I also read other comments. Bacon grease is not totally necessary,however that’s what I love about this. I enjoy very fine diced onions added. Just my personal preference. I may cut back the salt just a bit due to be using bacon grease.
