Cheesy Broccoli Soup
Ingredients

- 2 tablespoons butter or margarine
- cup chopped onion
- 2 tablespoons flour
- 2 cups milk
- pound Velveeta, cut into cubes
- 1 (10-ounce) package frozen chopped broccoli, thawed and drained
- 1 teaspoon pepper
Directions
Step 1: In a large saucepan, melt the butter over medium heat.
Step 2: Add the chopped onion and saut for about 5 minutes until tender, stirring occasionally.
Step 3: Sprinkle in the flour and cook for 1 minute, stirring constantly until it becomes bubbly.
Step 4: Gradually pour in the milk while stirring. Bring the mixture to a boil, then reduce heat to medium-low and simmer for 1 minute.
Step 5: Stir in the Velveeta cubes, broccoli, and pepper. Continue cooking until the cheese is fully melted and the soup is heated through, stirring occasionally.
Microwave Option: Place butter and onion in a 2-quart microwave-safe dish. Microwave on high for 30 seconds to 1 minute until the onion softens. Add remaining ingredients, mix well, and microwave on high for 6 to 8 minutes, stirring once halfway, until cheese melts and soup is hot.

Its yummy...I made a few changes though I added chicken broth and potatoes and i used fresh broccoli that I boiled first....turned out delicious...

I used your base recipe and kind of tweaked it a little. I always make a rue first. Which is the butter flour and milk added in a pan and blended well. I also added a 1/4 tsp of white pepper, 1/2 tsp is salt, 1/2 tsp black pepper, 2 tsp of white cooking wine and 1 cup of shredded Mexican blend cheese. I steamed the broccoli while making the soup base so it would be tender right away. It turned out really good. Thanks for you base recipe.

I'm gonna be honest I glanced over the recipe for base measurements. Added garlic before flour. Diced carrots and celery, added whole brocolli florets. Some better than bullion as needed. Used my immersion blender then added smaller cut florets with velveeta to simer and finish off. Absolutely heaven

I know I shouldn't give 5 stars if I changed it, but this was awesome! Instead of butter, I cooked 4 slices bacon in my soup pot until crunchy. I removed the bacon to drain grease & crumbled bacon for a garnish. I reserved 2 tbls bacon grease & used that to cook the onions, added the flour & cooked till flour was brown then used skim milk. I cooked cauliflower in a 1 1/2 cups lo sodium chicken stock till tender & added that (stock & all) to my milk/onion broth. Pureed & served w/the crumbled bacon YUM!

It was good! I'm gluten-free so used 2 tbsp corn starch for the flour then added it to half the milk and poured it into the hot butter and onion, brought it to a boil for a minute, added the rest of the milk and the rest of the ingredients. I may try some chicken broth next time as the other reviewers recommend.

This was easy and tasty. I used a box of Wisconsin cheddar cheese soup instead of Velveeta. I also used fresh broccoli which I microwaved for about 2 minutes or so before adding it to the soup. Instead of milk, I used chicken broth because I knew I would be adding the cheddar cheese soup and wouldn't need the additional milk.

I made this in my crockpot and cooked it on low for 8-10 hours, started in the morning before heading to work. I use fresh broccoli. I also added a bit of garlic powder, fresh cauliflower, and carrots. My kids love it.

My mom used to love this soup. I have lactose free and gluten free family members. I have to use a Lactose free cheese, such as Boars Head LF cheddar and corn starch as a thickening agent with lactose free milk or country crock plant based heavy cream. It makes a rich cream soup.

Based on comments I added some garlic powder, I doubled the recipe and I used fresh broccoli, including the stem cut very small. I did thicken slightly with more flour mixed with milk. I found the texture velvety as described, flavour was good and overall very rich.

I started by using 1/2 stick butter, dicing 2 small onions, & a tablespoon of minced garlic and sauteed that for about five minutes. Cut up fresh broccoli and added that - cooked another five to ten minutes. Put a whole block of Velveeta, a can of Cream of Mushroom and Cream of Chicken soup and four cups of milk. Added seasoning to taste. Super good!!!

Followed the recipe as written except used 2% Velveeta. Husband loved it. He suggested next time to make the broccoli smaller. I pulse blended the rest of the pot and it’s already gone, gone, gone! Thank you for this fast and easy delish soup recipe.

I used fresh broccoli that I steamed and added 1/2 cup of shredded sharp cheddar cheese, and kept some on the side to serve on top of the soup. Goes well with ham salad and chicken salad sandwiches, or just some crusty bread and a salad. Yummy soup recipe 😋!

This was my first time making this soup it was very delicious. I added garlic salt. The reason I made it was to top off my crock pot of some nationally known famous powdered soup mix. Honestly I didn’t want to mix the two together after tasting my real soup. I will definitely be making it again.

It was soooo good exactly the way I like my broccoli cheese soup to taste !!!! I added chicken breast chunks and made some homemade bread to go with it!!! Whole family loved it and will making it again!!!

I found this recipe in a house that I used to rent. A woman had passed away and her recipe box was in the house. This was 20 years ago but I still follow this recipe to a T this is the only way I will make broccoli and cheddar soup. Everyone in the family raves about this they don't want to learn how to make it themselves they always rely on me to make it which is fine I don't mind.

I made this recipe for years before I somehow managed to lose it. By increasing the Velveeta to 1 lb. and the broccoli to 12 oz. , this is the closest I can come to reinventing it. My husband is delighted to have this soup back on the table.

I added chopped cooked chicken breast and substituted half the broccoli for cauliflower. The recipe works great with it.

I added 8 oz cream cheese to doubled recipe and only used 1 lbs Velveeta. I also added 1/4 tsp garlic powder.

This was so good!! I made it once following the recipe to the t and it was amazing. To customize for my family, I grated a carrot to add. I also reduced the velveeta by a tiny amount and added a handful of fresh grated sharp cheddar cheese. Recipes are all about trying new things, or learning to make favorites and then making them your own. This one is an absolute win!! Thank you!!
