Mom's Dill Potato Salad Recipe

Potato Salad Recipe

Ingredients

  • 3 pounds new red potatoes
  • 1 cup mayonnaise
  • cup sour cream
  • 4 green onions, chopped
  • 2 tablespoons dried dill weed
  • 1 pinch salt and ground black pepper to taste

Directions

  1. Fill a large bowl with ice and cold water. Set aside.
  2. Place potatoes in a large pot and cover with water. Bring to a boil over high heat.
  3. Once boiling, reduce the heat to medium-low, cover, and cook the potatoes for about 15 minutes, until tender but still firm.
  4. Drain the potatoes and immediately transfer them to the ice water to cool for about 5 minutes.
  5. Once cooled, cut the potatoes into bite-sized pieces, leaving the skins on. Place them in a large bowl.
  6. In a separate bowl, mix together mayonnaise, sour cream, green onions, and dried dill weed. Season with salt and pepper to taste.
  7. Pour the mayonnaise mixture over the potatoes and toss gently to coat evenly.
  8. Taste the salad and adjust the seasoning if necessary.
  9. Cover the bowl and refrigerate the salad for at least 2 hours, or overnight, to allow the flavors to meld.

After making a few adjustments, including adding a hint of celery seed, increasing the sour cream to 1 cup, and reducing the dillweed to 1-1/2 tablespoons, we discovered that this potato salad is absolutely delicious.

Excellent recipe! I substituted low-fat mayo and sour cream, and included a finely diced red apple for added texture and color, skipping the celery as I'm not a fan. I also mixed in two diced boiled eggs. I agree with a previous suggestion to cut the potatoes into quarters before boiling for a time-saving shortcut.

Fantastic simple potato salad! I incorporated dill from a tube, tossed in a celery stalk and hard-boiled eggs. Be sure to add salt and pepper for flavor. I opted for low-fat sour cream and mayo to give it a lighter touch. Can't wait to pair it with my beer can chicken for dinner!

I appreciated the simple concept of this dish, but initially found it quite bland until I made several adjustments. I incorporated additional fresh dill, celery salt, Jane's Krazy Mixed Up Salt, as well as thinly sliced radishes and celery. The proportion of mayonnaise was a bit overwhelming for my taste, so I balanced the tanginess by adding more sour cream. While I believe in the value of basic recipes serving as a foundation for enhancing flavors, they should also be flavorful enough to stand on their own without requiring extensive modifications.

This dish exceeded our expectations and came out incredibly delicious! I substituted fresh dill from our garden for dried dill weed, chives from our garden for green onions, and added a touch of celery salt and a splash of white vinegar. I have to say, this recipe is a definite winner!
