I used one slice of turkey for each sandwich, a sufficient amount of spinach leaves to cover the sandwich, and an ample amount of roasted red pepper pieces from a jar. We absolutely adored this dish! Not being huge fans of mayonnaise, I opted to replace it with 2 spoonfuls of sour cream and decided to use the entire avocado to prevent any waste. We assembled everything on regular sub bread and grilled it all on our panini press, adding the spinach afterwards. Additionally, we swapped red onions in for red peppers, and the result was fantastic! It tasted just like a Panera Panini!

Decent, but the mayo quantity recommended is excessive. We prefer to reduce it by half or even just use a small amount. The excess mayo made the avocado mixture too runny and messy. It overwhelmed the other flavors, especially the mesquite smoked turkey and avocado that we wanted to savor.
