Copycat Costco Chicken Bake Recipe

- 3 skinless, boneless chicken breasts

- 6 slices bacon, cooked and crumbled
- 2 green onions, thinly sliced
- 1 cup shredded Italian cheeses, such as mozzarella and provolone, divided
- 3/4 cup shredded Parmesan cheese, divided
- 1 large egg, beaten
Directions
- Let pizza dough rest at room temperature for about 1 hour before using.
- Preheat the oven to 350F (175C). Line a baking sheet with aluminum foil and lay bacon strips in a single layer on the sheet. Bake in the preheated oven for about 15 minutes, or until browned and crisp. Drain bacon slices on paper towels and crumble when cool enough to handle. Keep the oven on.
- Season chicken breasts with salt, pepper, and garlic powder. Heat a large ovenproof skillet over medium-high heat and add olive oil. Place chicken breast in the skillet, seasoned side down, and cook undisturbed for about 5 minutes, until golden brown. Season the top side, flip the chicken, and cook for another minute.
- Add just enough water to fill the bottom of the pan and remove the pan from heat. Transfer the skillet to the preheated oven and bake the chicken for 17 to 20 minutes, or until an instant-read thermometer inserted near the center reads 165F (74C). Remove the chicken from the oven and let it rest until cool enough to handle. Chop the chicken into bite-sized pieces and set aside.
- Increase the oven temperature to 400F (200C). Line a baking sheet with parchment paper.
- Sprinkle flour on a large work surface. Divide the pizza dough into 3 portions. Roll each portion into a large circle about 12 to 13 inches wide. Spread Caesar dressing evenly over the dough circles, leaving a 1-inch border. Sprinkle 2 tablespoons of Parmesan cheese over the dressing. Set aside 2 tablespoons of shredded Italian cheese blend for later use.
- Top the dough circles evenly with chopped chicken, crumbled bacon, green onions, and the remaining Italian cheese blend.
- Fold the left and right edges of the dough slightly over the filling. Roll the bottom of the dough circle over the filling, then roll upwards towards the top edge until fully wrapped. Pinch the edges to seal and shape the dough into a long log about 12 inches long. Place the filled dough seam-side down on the prepared baking sheet.
- Brush the tops of the dough with the beaten egg and sprinkle evenly with the remaining cheese blend. Sprinkle each log with 1 tablespoon of shredded Parmesan cheese.
- Bake in the preheated oven for about 20 minutes, or until golden brown and crisp. Serve hot and enjoy!

I made but without the creamy Caesar dressing. I always wanted it if it didn't have the creamy Caesar dressing in it. And it was great.

I have made this twice already and it is amazing! So I cheated a little and had chicken breast grilled from our local restaurant. There were left overs so I wanted to use it with this recipe as it would save me time. The first time I made it would the egg wash but the second with melted butter on top and honestly both are great. Wanted to offer this option up if anyone has egg allergies. I also used turkey bacon that I baked first and then cut up and honestly it was delicious. This honestly was so easy to follow , with the pre-made dough of course, it will be my go to from now on. I will no longer buy this at Costco the homemade was 10 times better . Thank you again for this amazing recipe. This is also a great way to make and cut up as appetizers for parties.
