- 2 (15 ounce) cans black beans, undrained, divided
- 1 cup low-sodium chicken broth
- Cooking spray

- 1 teaspoon minced garlic
- 1 (10 ounce) can diced tomatoes with green chile peppers (such as RO*TEL)

- 4 teaspoons lime juice
- 2 teaspoons ground cumin

Directions
- Start by placing one can of black beans into a blender. Add the chicken broth and blend until smooth. Set the mixture aside for later.
- Next, heat a large saucepan over medium-high heat and lightly coat it with cooking spray. Add the chopped onion and minced garlic to the pan. Cook and stir for about 5 minutes, or until the onion becomes tender.
- Stir in the remaining can of black beans (with its liquid), diced tomatoes with green chile peppers, yogurt (if using), lime juice, cumin, red pepper flakes (if desired), and the pured beans from earlier. Bring everything to a boil.
- Once it reaches a boil, reduce the heat to low, cover the pan, and let it simmer for 25 to 30 minutes. Stir occasionally to ensure nothing sticks to the bottom.
