Cabbage Beef Soup Recipe

Ingredients

  • 2 tablespoons vegetable oil
  • 1 pound ground beef
  • large onion, chopped
  • 5 cups shredded cabbage
  • 2 (16 ounce) cans red kidney beans, drained
  • 24 ounces tomato sauce
  • 2 cups water
  • 4 beef bouillon cubes
  • 1 teaspoons ground cumin
  • 1 teaspoon salt
  • 1 teaspoon pepper

Directions

Step 1: Begin by gathering all of your ingredients. This ensures that you have everything at hand before starting the cooking process.

Step 2: Heat the vegetable oil in a large stockpot over medium-high heat. Once the oil is hot, add the ground beef and chopped onion. Cook, stirring frequently, for 5 to 7 minutes, until the beef is browned and crumbled, and the onion is translucent.

Step 3: Once the beef is browned and the onion softened, drain any excess fat from the mixture. Then transfer the beef and onion to a slow cooker.

Step 4: In the slow cooker, add the shredded cabbage, drained kidney beans, tomato sauce, water, beef bouillon cubes, cumin, salt, and pepper. Stir everything together until well combined.

Step 5: Cover the slow cooker and set it to cook. You can cook on Low for 6 to 8 hours or on High for 4 hours. Stir the mixture occasionally throughout the cooking process to ensure even cooking.

Step 6: After the cooking time is up, your stew should be ready. Serve hot and enjoy the rich, comforting flavors of the beef, cabbage, and beans!

Excellent- I was so happy with the way this turned out! I used 2 cans of tomato sauce, one can of diced tomatoes, 2 cans of beans (non-drained) and one additional can of beans (drained). Don't add the water- let the liquid from the beans and the tomatoes be the broth! I cooked this on the stove in a big pot in about an hour and a half- no problems. Also- wait to add the cabbage until you're about halfway done, and definitely add about a full head of cabbage. This was great and we will be enjoying this again- thanks!

Wondeful and healthy. I used pinto instead of kidney beans as I've read pintos have more nutritional value. I used diced tomatoes instead of tomato sauce and added two teaspoons of diced garlic. I cut the cumin to avoid the "chili" comments a few had shared. I also used chicken broth instead of water. I served this over brown rice, again because it's a whole grain, and it was so yummy. Great recipe that you can throw together in a few minutes and allow to cook all day. I did 8 hours on low and then it was on warm for about 2 hours. It was perfect.

This was WONDERFUL! I made a few changes, and loved it! I sauteed 1 large onion in 4 tbs of butter 3-4 minutes. Then I added 1 pound ground beef and 1 pound ground breakfast sausage. When browned I put it in the Instant Pot. I used 1 whole small- medium cabbage, 1 can kidney beans and 1 can pinto beans, 1 can of beef broth instead of the water and bouillon, and I used 2 cans of fire roasted tomatoes Salsa style (with some jalapeno) instead of the tomato sauce. I added a heaping tbs of italian seasoning and 1 1/2 teas garlic powder, plus the suggested amount of cumin, salt and pepper. Sooo good!!! Thanks for the recipe!

Delicious! I've made it in the crockpot and the pressure cooker (only 20 minutes at high pressure) and it's great both ways. I added some sliced mushrooms and minced garlic, but I've done it without those additions and it's great with or without. I used ground turkey instead of ground beef. It's very filling and helps with weight loss.

I have been making this soup for years. I do mine a little differently. I chop 1-2 green bell peppers & cook with meat and onions then add to soup. 1/2 water & 1/2 beef stock. I don't drain my beans and add diced tomatoes. Delicious

I was shocked at how good the soup was. The hubs had two helpings and that’s not typical of him. I followed the recipe except I cooked it in my Dutch oven instead of the slow cooker and used pinto beans instead of kidney beans. I will make this again.

This was so similar to my aunt's cabbage casserole when I was a kid that I gave it a try. I swapped out the beans for small elbow macaroni and it absorbed the water so it turned into a casserole instead of soup, just as I'd hoped. Delicious!

I took the suggestion of others and eliminated the cumin. I added 1 Tbsp of white sugar and 1 Tbsp of white vinegar (like I do for my stuffed cabbage recipe). I used 1 can of crushed tomatoes and 2 cans of tomato sauce, doubled the water. Pinto beans instead of kidney beans, as others suggested. Added garlic and bacon, as well then combined everything in the crock pot, no browning. Really good! Nice base recipe to build on.

Great, everyone loved it. Only changes made were: Did not drain or raise beans, too much flavor & thickening power to throw out AND because I did, I Omitted the salt, but did add 1/2 tsp Kirkland no-salt. I did everything in a mult-fuction 8 quart rice cooker with saute & slow cooker functions. Slow cooked 4 hours, but will do 3 hours next time to preserve some firmer texture.

Halved recipe on stovetop, used beef flavored better than bullion (2tsp for halved recipe). Came out great. Added garlic powder and used can diced tomatoes, had on hand.

Very good and very easy! I did add a 12 ounce can of v-8 juice simply because we like our soup soupy. Used small red beans and added a little garlic powder and a small amount of sugar to balance the acid. I’ll be making it again for sure! Oh yes, used my instant pot to sauté meat and then changed it to the slow cook setting. Only one pan to wash.

I made this for the family, and when it was time to transfer into the slow cooker, I discovered that I left it at work. Finished in a Dutch Oven and it can out Fantastic, flavors were bold and it was very satisfying I put some of the extras in the freeze to see how it will come out, if that does not work I might just go through the trouble of canning some. It was that good

Great results with a few tweaks. I added two full heads of minced garlic and three small chopped carrots, and cooked on low for seven hours, then on high for two hours. I also substituted olive oil for vegetable oil and used sodium free canned kidney beans, tomato sauce, and reduced sodium beef broth in place of bouillon cubes. Although I cut sodium out in nearly every aspect of this recipe, I used sea salt to add the necessary salty flavor since I could control the amount and source. Overall, great recipe and highly recommended!

Very good recipe. I also added 1 cooked smoked sausage and chopped it real fine for some more meat. So tasty, even my picky 2 year old daughter ate a little.
