Black Cod with Lime-Soy Sauce and Cherry Tomatoes

Ingredients

  • Cooking spray
  • 3 tablespoons fresh lime juice
  • 2 tablespoons light brown sugar
  • 2 tablespoons rice vinegar
  • 1 tablespoon soy sauce
  • 1 (1-pound) fillet black cod, bones removed
  • pint cherry tomatoes

Directions

  1. Preheat the oven to 425F (220C). Lightly spray the bottom of a Dutch oven or a covered casserole dish with cooking spray.
  2. In a medium saucepan, combine lime juice, brown sugar, rice vinegar, and soy sauce. Place the pan over medium heat and cook, stirring frequently, for about 5 minutes, or until the sauce thickens.
  3. Place the black cod fillet in the prepared Dutch oven. Pour the thickened sauce over the fish, ensuring its well-coated. Arrange the cherry tomatoes around the fish.
  4. Cover the dish with an oven-safe lid and bake in the preheated oven for about 10 minutes, or until the fish flakes easily with a fork.
