Alabama Chicken Stew Recipe
Ingredients
This recipe was developed at its original yield. Ingredient amounts are automatically adjusted, but cooking times and steps remain unchanged. Note that not all recipes scale perfectly.
Original recipe (1X) yields 10 servings
- 1 (4-pound) whole chicken
- 2 large bay leaves
- 1 tablespoon salt, or more to taste
- 2 teaspoons ground black pepper, or more to taste
- 1 gallons water
- 2 (28 ounce) cans whole tomatoes and their juices
- 10 medium potatoes, peeled and cubed
- 4 large carrots, diced
- 4 stalks celery, diced
- 2 medium onions, diced
- 1 cups frozen corn
Directions
- Gather all ingredients.
- Prepare the chicken: Place the chicken, bay leaves, 1 tablespoon of salt, and 2 teaspoons of pepper into a 10-quart stockpot. Pour in water to cover and bring to a boil. Once boiling, reduce the heat and let it simmer for about 2 hours, or until the chicken is no longer pink at the bone and the juices run clear. The internal temperature should reach 165F (74C).
Tip: To check for doneness, use an instant-read thermometer inserted near the bone. - Cool the chicken: Once cooked, remove the pot from the heat. Carefully transfer the chicken to a cutting board. Let it cool for about 15 minutes before handling.
- Shred the chicken: After the chicken has cooled, remove the skin and bones. Shred the meat into bite-sized pieces.
- Prepare the tomatoes: Empty the canned tomatoes and their juices into a casserole dish. Use your hands to break up the tomatoes into smaller pieces.
- Combine ingredients: Add the shredded chicken back into the stockpot along with the crushed tomatoes and juices, potatoes, carrots, celery, onions, and frozen corn.
- Simmer the stew: Cook the stew over medium-low heat, stirring occasionally. Let it simmer for 45 minutes to 1 hour, or until the vegetables are tender and the potatoes have thickened the stew.

Delicious and with tons of leftovers. Used boneless skinless chicken breasts instead, only 5-6 potatoes, and added a little rice. SO Easy to make with staples already on hand in the refrigerator and pantry.

This is so similar to a recipe called Hopkins County Stew. The two differences are (1) to add canned cream corn toward the end—(you don’t want it to burn on the bottom so do it last and stir frequently); and (2) add 2-3 tablespoons of butter to increase the richness. Served either with (a) cornbread or (b) saltines, dill pickles slices and cheddar cheese on the side.

I've been making this since I was 15 years old and had no idea it was called Alabama Chicken Stew. My mother was from North Alabama and she taught me how to make this from her grandmother's recipe. I make it at least 5 times a year. Sometimes I cheat and use a rotisserie chicken if I'm in a hurry, but it's still SUPER yummy. I also play with the amount of Veg that I use... sometimes more or less based on what I've got on hand. Also, I now throw in a little fresh garlic for a little different flavour sometimes.

I used a pound and a half of bone-in, skin-on chicken thighs instead of a whole chicken (reasoning: the bones and skin add to the broth, and thighs were much easier to take apart and shred) and halved the rest of the ingredients. We still had lots of leftovers. Everyone loved it. A few dashes of Frank’s Red Hot Sauce was just right for those of us who like a little more heat. One note I added for myself was not to shred the chicken too fine because it breaks down more as it cooks.

Why just stop at frozen corn? Mixed vegetables (with Lima beans) was fantastic! Also, We also used a little less salt and added baby potatoes cut in half and we didn’t need to skin them. Less work!

I just finished making this. The recipe itself is quite easy. But I found it lacking a bit of flavor. My chicken was beyond done after 2 hrs and 15 min, falling off the bone while removing it from the pot. But it was quite flavorful. And because the largest stock pot I have is 8 QT, I mad to split the main portion with a smaller sauce pan. I am unsure what I would add next time, although I think a squeeze of lemon would go well. The consistency was more like a soup than a stew, but that could be because I diced the potatoes well ahead of time and kept them in a bowl of water. Next time I will wait to do that, since the potato starch diffuses into the water. I may try to thicken it a bit with some corn starch. Overall this is a very good recipe, and I think it would go well with tortilla strips, similar to what you would serve with chicken tortilla soup. The saltiness would be a nice touch as well.

This recipe is great… but u have to cook it with your heart … I remember how my grandad always made it and he always added slap ya mama seasoning, a can of natural ice, and we never added the tomatoes until the potatoes was almost done… he said the tomatoes didn’t let the potato cook thoroughly

Next time I would probably roast the chicken in the oven before hand instead of throwing it in the pot raw to amp up the flavor.

I'm not a tomato base fan but this stew is absolutely delicious. I made it camping over a campfire the first time. I have a gas stove at home. I send it to hunting camp every year.
