Onion Soup with Cheese and Cream
This delicious and creamy onion soup combines the flavors of beef bouillon, onions, and a blend of cheeses, all simmered together to create a rich, savory dish. Ingredients
- 2 quarts water
- 8 cubes beef bouillon, crumbled
- 2 large onions, quartered and sliced
- 1 teaspoon salt
- 1 teaspoon coarsely ground black pepper
- cup all-purpose flour
- cup cold water
- 1 cup heavy cream
- 1 cups shredded Colby-Monterey Jack cheese
Directions
- In a large, heavy pot over medium heat, bring 2 quarts of water to a boil. Stir in the bouillon cubes and let them dissolve for about 10 minutes.
- Add the sliced onions to the boiling water. Reduce the heat and simmer for 30 minutes.
- Stir in the salt and black pepper, then continue to simmer for an additional 30 minutes.
- In a separate bowl, combine the flour with cup cold water to form a smooth paste. Carefully whisk this paste into the simmering soup, being gentle to avoid breaking up the onions.
- Let the soup simmer for another 30 minutes, allowing the flavors to meld together.
- Stir in the heavy cream and shredded cheese. Continue stirring until the cheese has melted and the mixture is thoroughly heated.
- If the soup is too thick, you can thin it with a little extra water to reach your desired consistency.
- Serve the soup hot, optionally garnished with croutons for added crunch.
