Homemade Chicken Fettuccine Recipe

Ingredients

  • 8 ounces fettuccini pasta
  • 2 tablespoons butter
  • 3 skinless, boneless chicken breast halves, cut into chunks
  • 8 ounces mushrooms, sliced
  • 1 teaspoon garlic salt
  • 1 teaspoon ground black pepper
  • 1 cups heavy cream
  • cup grated Parmesan cheese

Directions

Step 1: Bring a large pot of lightly salted water to a boil. Add the fettuccine and cook for 8 to 10 minutes or until al dente. Drain the pasta and set it aside.

Step 2: While the pasta is cooking, heat the butter in a large skillet over medium-high heat. Add the chicken chunks and sliced mushrooms. Brown the chicken until it is cooked through, and the mushrooms are tender.

Step 3: Season the chicken and mushrooms with garlic salt and ground black pepper to taste.

Step 4: Pour in the heavy cream and bring the mixture to a simmer. Stir continuously until the sauce thickens to your desired consistency.

Step 5: Once the sauce has thickened, add the grated Parmesan cheese and stir until the cheese is fully incorporated into the sauce.

Step 6: Serve the creamy chicken and mushroom sauce over the cooked fettuccine pasta. Enjoy!

As many others, I increased the flavor with the butter, onion, garlic and pepper. I used half and half for less calories and thickened the sauce with a little flour. (I also used a whole wheat pasta.) Easy recipe! Husband gave it a thumbs up!

Doubled the recipe. Recipe did not call for it, but I sauteed onion, bell pepper, and garlic with the mushrooms. Added Mexican cheese when melting parmesan. Also, after ingredients were combined I poured into casserole dish, topped with French fried onions, and placed in oven @350 until onions browned. Excellent flavor! Fairly easy prep. *I followed this recipe as a guideline, with my own twist. Either way, quite tasty. Great way to use leftover chicken (or turkey). I de-boned a chicken.

This is my go-to recipe for alfredo. I love that I don't have to do any thickening. First of all, I season my chicken well. I use a chicken seasonal, garlic granules, pepper and a little chili powder. I love to have the chicken seasoned BEFORE I use it in there sauce. I take the chicken out after just a few minutes of pan-frying so that it does not dry out and cover it (so it continues to cook just a little). Then I add the garlic and fry just a few minutes. (As others have stated, I do use garlic) Then I use about 1/2 cup of Romano instead of the Parmesan. It's a more pungent cheese and our family loves it. Also, I sometimes garnish with Asiago cheese as well. If it gets too thick, just add a little milk Thank you for putting it on all recipes!!

Very good. Add pepper jack cheese (16 oz), plenty of black pepper (to taste) and add or substitute crawfish tail meat for a wonderful culinary twist. Do not overcook the crawfish as they will become rubbery. They actually are parboiled before they are peeled, so only need to be heated before serving. I have had numerous requests for my recipe.

This is a great, tasty and quick recipe. The second time I made it I added diced bacon and asparagus cut into 1 inch pieces. fry the bacon, mushroom and asparagus separately in 1 tblsp of garlic butter. mix it in with the chicken just before adding the cream.

My 16 year old grandson made this recipe for dinner tonight. He added 2 ounces of Philadelphia cream cheese, 1/4 cup Parmesan cheese with 1/4 cup Romano cheese and split the heavy cream with half and half. He used a clove of fresh crushed garlic instead of garlic salt, and He used fresh fettuccine noodles then garnished with a few chopped green onions. This was a fantastic recipe and he did an outstanding job making it. Yummy! Will definitely use this recipe again.

This is very simple, and delicious. We did tweak with 3 cloves of fresh garlic instead of garlic salt, and a squeeze of fresh lemon at the end.

It came out good. I like cooking the sauce in with the chicken flavorings, it gives it more flavor and that way you don’t need to use chicken broth. The only thing I didn’t like was that the chicken absorbed all of the sauce which had me improvising and making more with regular milk and way more heavy cream, parmesan, seasoning and butter because I was making a serving of 6. I also added some dried Italian seasoning and dried Basil. I just ended up eyeballing after that, but my pasta came out good.

I used fresh spinach instead of mushrooms and used a rotini noodle. (Easier for kids) I used 2 extra tbsp butter with minced garlic. For the Alfredo I used 3 cups of heavy cream and an entire 1/1/4 cup bag of shredded Parmesan.

Didn't make the sauce as instructed cuz I was so tire after work that I used Ragu! Still did the rest of it and added broccoli, canned mushrooms (too tired to chop), onion, and red bell pepper. Was delish! Next time when I have a day off from work, I'll do the sauce right.

I don't stock garlic salt only garlic powder. I needed to add salt. I doubled the recipe and it took almost 15 minutes of constant stirring to thicken. Would make again.
