Grilled Fish Steaks Recipe
This fresh and flavorful grilled halibut is marinated in a zesty lemon and herb mixture, creating a perfect balance of citrus and savory flavors. It's an easy, quick, and delicious meal that will impress at any summer gathering.
Ingredients
- 6 tablespoons olive oil
- 1 tablespoon fresh lemon juice
- 1 tablespoon chopped fresh parsley
- 1 clove garlic, minced
- 1 teaspoon dried basil
- 1 teaspoon salt (or to taste)
- 1 teaspoon ground black pepper
- 2 (6 ounce) halibut fillets
Directions
Step 1: Begin by gathering all your ingredients. This ensures you have everything you need before you start preparing the marinade and the fish.
Step 2: In a stainless steel or glass bowl, combine the olive oil, lemon juice, chopped parsley, minced garlic, dried basil, salt, and ground black pepper. Stir well until all ingredients are fully mixed.
Step 3: Place the halibut fillets into a shallow glass dish or a resealable plastic bag. Pour the marinade mixture over the fish, ensuring it's well-coated. Cover the dish or seal the bag, then refrigerate for 1 hour. Be sure to turn the fillets occasionally to allow the marinade to fully infuse the fish.
Step 4: While the fish is marinating, preheat your outdoor grill to high heat. Lightly oil the grill grate to prevent the fish from sticking. Ensure the grate is positioned about 4 inches from the heat source.
Step 5: After the halibut has marinated, remove the fillets from the marinade, allowing any excess to drain off. Place the fillets on the preheated grill and cook for about 5 minutes on each side, or until the fish flakes easily with a fork.
Step 6: Once the fish is cooked, remove it from the grill and serve immediately. Enjoy your perfectly grilled halibut, bursting with fresh flavors!

Grilled Fish Steaks are a staple in many cuisines around the world, offering a simple yet flavorful way to enjoy seafood. The dish is often made with hearty fish fillets, such as halibut, marinated in a mixture of olive oil, garlic, herbs, and lemon juice, then grilled to perfection. This dish is particularly favored for its versatility, making it a popular choice for both casual family dinners and elegant gatherings.
Origin of Grilled Fish Steaks
The origins of grilled fish steaks can be traced back to the Mediterranean region, where grilling seafood over an open flame has been a long-standing culinary tradition. Fish has been a crucial part of Mediterranean diets for centuries, and grilling it was a practical and delicious method of preparation. The technique of grilling fish steaks over charcoal or wood adds a smoky, charred flavor, which has become a defining characteristic of the dish.
Over time, this method spread to other coastal regions, including the Americas, where it was adapted to local tastes and available fish species. Today, the dish is enjoyed worldwide, from the beaches of California to the shores of Greece and the coastlines of Latin America.
Regional Variations and Adaptations
Different regions have put their own spin on grilled fish steaks. In the Mediterranean, fresh herbs like rosemary, thyme, and oregano are often added to the marinade, enhancing the natural flavor of the fish. Meanwhile, in Latin American cuisine, grilled fish steaks might be seasoned with ingredients like cilantro, lime, and chili, creating a more vibrant, zesty profile.
In the United States, particularly along the coasts, grilled fish steaks are often paired with sides like corn on the cob, roasted vegetables, or rice, creating a well-rounded meal that is both satisfying and healthy. In contrast, in the UK, a similar dish might be served with potatoes and a light salad, reflecting the more understated flavors of British cuisine.
Differences from Similar Dishes
While grilled fish steaks are often compared to other grilled fish dishes, such as fish fillets or skewered fish kebabs, the key distinction lies in the thickness of the fish. Fish steaks, typically cut from the thickest part of the fish, are larger and more substantial compared to the thinner fillets commonly used in other recipes. This allows for a more even cooking process, ensuring the fish stays moist and tender without falling apart on the grill.
Another important difference is the marinade. Many other grilled fish recipes use simpler seasoning methods, such as a sprinkle of salt and pepper. In contrast, grilled fish steaks are often marinated for longer periods, allowing the herbs, garlic, and lemon to penetrate the flesh and enhance the flavor, resulting in a more complex taste.
Where Grilled Fish Steaks Are Served
Grilled fish steaks are commonly served at seafood restaurants, especially those located near coastal regions. They are often a popular choice on restaurant menus in places like the Mediterranean, the Caribbean, and the Pacific coast. Additionally, they are a favorite at BBQs and outdoor gatherings, as grilling is a communal activity, and fish steaks are easy to prepare for large groups.
In addition to formal settings, grilled fish steaks are also a staple in home cooking, particularly during the warmer months. With minimal preparation and a quick grilling time, they make for a convenient yet impressive meal option for busy weeknights or weekend get-togethers.

My husband prepared this while I was at work, The only adjustments we made was that we baked it since we don't have a grill. We baked it at 450 degrees for 15 to 20 minutes. I'm not a fish lover either but this was great!

Our favorite fish recipe. I use Cod instead of Halibut. It's usually thinner and less expensive. Followed the recipe with suggestions, use less salt, freshly ground pepper and more lemon. Marinate 3-4 hours but have done so overnight as well. I add a dash of Emeril's seasoning and cook on the gas grill on my (rectangular) lightly oiled cast iron pan. Preheat the pan on the grill, cook the cod a few minutes per side and then turn the grill off for a few minutes, while the cod finishes cooking. Cod has an uneven thickness so you need to add the thin pieces after the thick ones. Everyone I have served this to loves it.

This recipe was delicious. I omitted the salt due to a low sodium diet and baked the fish at 450 for twenty minutes. The fish was plenty flavorful without the salt.

The marinade gave the fish a great flavor without overpowering it. I only used 4 Tblsp of oil and would probably do less next time. I also baked the fish instead...400 degrees for 20 minutes.

I made this with Chilean sea bass and it was great! I only made a couple changes. I didn't have a grill available, so i sautéed it in a skillet on the stove with white wine and slightly less olive oil. And I only marinated it for half an hour. I didn't notice any loss of flavor from this. I served it with baked red potatoes and steamed green beans.

I've used this recipe many times and it's perfect! I now like to use fresh basil instead of dried, and I marinate for a couple of hours. Depending on how many servings you may want to cut down on the oil or drain well to avoid flare ups. I now also baste mine with butter as they are cooking. I've used this recipe for both halibut and swordfish. Should be great with any white fish.

Absolutely delicious! After reading the reviews I placed the fish directly on the grill for the first side (for flavor) then onto foil for the second side (to keep it together). Hands down a keeper! (Did add Marjoram and Thyme and omit the Parsley due to personal preference).

Instead of draining it, I kept all the juices and pan seared it. Also used a lot more lemon juice. Totally delicious.

I just poured the marinade on top of the fish (Mahi mahi) while they sat in the dish I was going to cook them in. They sat for about 15 min. before going into a 400F oven for 12 min. Results were great! I will cook more fish this way as my husband, who is not a great fish lover, really enjoyed this dish!

I wanted to grill fish and chicken kebabs on the BBQ and was looking for a good marinade for both. This worked great! I read some of the reviews and noted some people found it too salty, so I cut the salt in half, and added a bit more garlic. I used fresh parsley and fresh basil from our garden, and marinated the chicken breast in chunks for 5-6 hours, and used both ahi tuna and mahi-mahi steaks* (marinated for 3-4 hours, then cut the fish into chunks just before skewering.) I did not drain off the marinade, but instead basted them more while cooking. Paired the kebabs with red peppers, mushrooms, onion and zucchini. Everyone raved about it all! The fish was particularly good, but the chicken was a hit as well. Served with rice pilaf and coleslaw. I think I've found my "go-to" simple, fresh marinade!! *actually used flash frozen ahi and mahi mahi that I defrosted overnight - no one knew the difference!! Delicious!

Didn't change any of the ingredients except the amount of salt. Recipe is very flavorful as written. Marinated the cod most of the day. Added a bit of chicken broth and butter to the marinade and boiled briefly to make a nice sauce. So easy and delicious.

This is my go-to halibut recipe! Every dinner party I’ve hosted with it on the menu has a text later in the week asking me for the recipe. It’s instant food memory fodder for my 8 yo. Give it a try.

I made this marinade according to directions. I thought it was a little too salty, but my husband thought it was perfect. Although I used a gas grill, the fish seemed to have a "cooked over wood" taste. It was delicious. I made it with corvina fish the first time and a week later I made it with mahi mahi. I'm definitely going to continue using this recipe.

This recipe is awesome! I used it on crappie and would highly recommend it for your panfish. You will need foil or something else to keep it from falling through the grates though. Definitely need to try it!
