French Onion Soup Gratinée Recipe

Ingredients

  • 4 tablespoons butter
  • 2 large red onions, thinly sliced
  • 2 large sweet onions, thinly sliced
  • 1 teaspoon salt
  • 1 (48 fluid ounce) can chicken broth
  • 1 (14 ounce) can beef broth
  • cup red wine
  • 1 tablespoon Worcestershire sauce
  • 2 sprigs fresh parsley
  • 1 sprig fresh thyme leaves
  • 1 bay leaf
  • 1 tablespoon balsamic vinegar
  • Salt and freshly ground black pepper, to taste
  • 4 thick slices French bread
  • 8 slices Gruyre cheese, at room temperature
  • cup shredded Asiago cheese, at room temperature
  • 4 pinches paprika

Directions

Step 1: In a large pot, melt the butter over medium-high heat. Add the red onions, sweet onions, and salt. Stir frequently and cook for about 35 minutes, until the onions are caramelized and almost syrupy.

Step 2: Stir in the chicken broth, beef broth, red wine, and Worcestershire sauce. Bundle the parsley, thyme, and bay leaf with kitchen twine and add to the pot. Simmer over medium heat for 20 minutes, stirring occasionally. Afterward, remove and discard the herb bundle.

Step 3: Reduce the heat to low and stir in the balsamic vinegar. Season the soup with salt and pepper to taste. Keep the soup covered and warm over low heat while you prepare the bread.

Step 4: Preheat the broiler by setting an oven rack about 6 inches from the heat source. Arrange the bread slices on a baking sheet and broil for about 3 minutes, turning once, until both sides are well toasted. Remove from the oven, but leave the broiler on.

Step 5: Arrange 4 oven-safe bowls or crocks on a rimmed baking sheet. Fill each bowl with the hot soup, about 2/3 full. Place one slice of toasted bread in each bowl. Top with 2 slices of Gruyre cheese and a quarter of the Asiago cheese. Sprinkle a pinch of paprika on top of each serving.

Step 6: Broil the bowls under the hot broiler for about 5 minutes, or until the cheese is bubbly and golden brown. The cheese will melt beautifully over the sides of the bowls, creating a delicious, crusty seal.

Step 7: Serve the soup hot, and enjoy the rich, comforting flavors!

Recipe Tip

You can substitute Italian bread for French bread, Swiss cheese for Gruyre, and mozzarella for Asiago if preferred.
