Turkey Fried Rice
This easy and delicious Turkey Fried Rice is a perfect way to use up leftover turkey and rice. With a savory blend of vegetables, soy sauce, and sesame oil, its a quick meal thats full of flavor.
Ingredients
- Nonstick cooking spray
- 1 medium onion, diced
- cup frozen peas and carrots
- 2 tablespoons salted butter
- 3 cups cold cooked rice
- 2 cups diced cooked turkey
- 2 tablespoons soy sauce (or more to taste)
- 1 tablespoon sesame oil (or as needed)
- 2 large eggs
Directions
- Coat a large pan with nonstick cooking spray. Add diced onion and saut over medium heat until translucent, about 5 minutes.
- Add frozen peas and carrots, along with the butter. Stir and cook for 3 to 5 minutes, until the butter melts and the vegetables are heated through.
- Increase the heat to medium-high and stir in the cold rice and diced turkey. Add soy sauce 2 tablespoons at a time, stirring until the rice begins to take on a darker color from the sauce.
- Push the rice mixture to the sides of the pan to create space in the center. Pour sesame oil into the center and stir it into the rice, ensuring the mixture is evenly coated.
- Push everything to the sides of the pan again, leaving space in the center. Crack the eggs into the center and scramble them until set, about 2 to 3 minutes. Then, stir the scrambled eggs into the rice mixture until fully combined.
Recipe Tip
For best results, use rice that was prepared the day before, as it will fry better and have the right texture.
