Homemade Chicken Noodle Soup Recipe

Chicken Soup with Egg Noodles

This comforting chicken soup with tender egg noodles is a delicious and satisfying meal that comes together quickly. Perfect for any time of the year, especially when you need something warm and hearty.

Ingredients

  • 4 chicken breast tenderloins, cut into bite-size pieces
  • Salt and ground black pepper to taste
  • 2 tablespoons extra-virgin olive oil, divided
  • 2 stalks celery, finely chopped
  • 2 small carrots, finely chopped
  • 3 cloves garlic, finely chopped
  • 2 (14 ounce) cans chicken broth
  • 2 cups medium egg noodles

Directions

  1. Season the chicken pieces with salt and pepper.
  2. Heat 1 tablespoon of olive oil in a large saucepan over medium heat. Add the chicken to the pan and cook, stirring occasionally, until browned and no longer pink in the center, about 10 minutes. Once cooked, transfer the chicken to a plate and set aside.
  3. Add the remaining tablespoon of olive oil to the same saucepan. Saut the chopped celery, carrots, and garlic over medium heat until softened, about 5 to 7 minutes. Season with a pinch of pepper to taste.
  4. Pour the chicken broth into the saucepan and deglaze the pan by scraping up any browned bits of chicken and vegetables from the bottom. Bring the broth to a boil.
  5. Add the egg noodles to the boiling broth. Reduce the heat to medium-low and let the noodles simmer until tender but still firm to the bite, about 6 to 8 minutes. Stir occasionally to prevent sticking.
  6. Season the soup with additional salt and pepper as needed.
  7. Ladle the soup into bowls, then top with the cooked chicken pieces. Serve immediately and enjoy!
