Scallops in Creamy Mushroom Sauce

This delicious scallop recipe features tender, juicy scallops in a rich, creamy mushroom sauce. Its a perfect dish for a special dinner or a cozy meal at home.

Ingredients

  • 1 pound scallops, rinsed and drained
  • 2 tablespoons butter
  • 1 bunch green onion, minced
  • 4 ounces fresh mushrooms, sliced
  • 2 tablespoons all-purpose flour
  • 1 cup milk
  • cup dry white wine
  • 1 teaspoon salt
  • 1 pinch ground white pepper
  • cup shredded Swiss cheese
  • 2 tablespoons chopped fresh parsley

Directions

  1. Rinse and drain the scallops thoroughly, then set them aside.
  2. In a small stockpot, melt the butter over medium-low heat.
  3. Add the minced green onions and sliced mushrooms to the pot. Saut until they become tender and fragrant, about 3-4 minutes.
  4. Stir in the all-purpose flour and cook for another 1-2 minutes, allowing the flour to absorb the butter and create a roux.
  5. Slowly pour in the milk, stirring constantly to avoid lumps. Continue cooking over medium heat until the mixture thickens and begins to bubble, about 5-7 minutes.
  6. Add the dry white wine, salt, pepper, and the rinsed scallops to the sauce. Stir gently to combine.
  7. Simmer the mixture over medium heat for an additional 5-6 minutes, or until the sauce has thickened and the scallops are fully cooked.
  8. Remove from heat and sprinkle the shredded Swiss cheese over the top, allowing it to melt into the sauce.
  9. Garnish with chopped fresh parsley before serving. Enjoy!
