Vegan "Beef" Broth Recipe

Ingredients

This recipe was developed at its original yield. Ingredient amounts are automatically adjusted, but cooking times and steps remain unchanged. Note that not all recipes scale perfectly.

Original recipe (1X) yields 12 servings:

  • 1 yellow onion, chopped
  • 3 ribs celery, chopped
  • 2 carrots, chopped
  • 2 leeks, chopped
  • 4 cloves garlic, diced
  • 12 cups water
  • 1 cup chopped fresh parsley
  • 2 teaspoons dried thyme
  • 2 teaspoons dried oregano
  • 2 bay leaves
  • Salt and ground black pepper to taste
  • cup soy sauce
  • 3 teaspoons liquid smoke
  • 1 teaspoon vegan Worcestershire sauce

Directions

  1. Heat a large nonstick soup pot over medium heat and saut the chopped onion for about 5 minutes, until softened.
  2. Add the chopped celery, carrots, leeks, and diced garlic to the pot. Continue sauting for another 10 minutes until the vegetables begin to soften.
  3. Pour in 12 cups of water and stir in the chopped parsley, dried thyme, dried oregano, bay leaves, salt, and ground black pepper. Bring the mixture to a boil.
  4. Once boiling, reduce the heat to medium-low and let it simmer for 30 minutes, allowing the flavors to meld together.
  5. Add the soy sauce, liquid smoke, and vegan Worcestershire sauce to the pot. Stir well and let it simmer for an additional hour.
  6. After simmering, use a slotted spoon to remove and discard the cooked vegetables and bay leaves.

Cook's Note

If you can't find vegan Worcestershire sauce, you can make your own by using a mixture of soy sauce, hot sauce, dry mustard, and allspice.
