Patsy's Best Barbeque Beef Recipe

Slow Cooker Beef Roast

Ingredients (12 servings):

  • 1 bunch celery, chopped
  • 3 large onions, chopped
  • 1 medium green bell pepper, chopped
  • 1 cups ketchup
  • cup water
  • 3 tablespoons barbeque sauce
  • 3 tablespoons cider vinegar
  • 1 teaspoon hot pepper sauce
  • 2 teaspoons chili powder
  • 2 tablespoons salt
  • 1 teaspoon pepper
  • 6 pounds boneless beef chuck roast, trimmed and chopped

Directions:

  1. In a large bowl, combine the chopped celery, onions, green pepper, ketchup, water, barbeque sauce, vinegar, and hot pepper sauce. Stir well to mix.
  2. Season the mixture with chili powder, salt, and pepper, and stir again to incorporate the spices evenly.
  3. Place the beef chuck roast in a slow cooker and pour the prepared sauce mixture over the roast, ensuring it is well-covered.
  4. Cover the slow cooker with its lid and set it to cook on Low for approximately 12 hours, allowing the flavors to meld and the meat to become tender.
  5. After the cooking time is complete, use a fork to shred the beef into smaller pieces, mixing it into the sauce.
  6. Increase the heat to High on the slow cooker and continue cooking until most of the liquid has reduced, about another 30-60 minutes.
  7. Once the sauce has thickened and the beef is tender and fully shredded, your dish is ready to serve!
