Slow Cooker Beef Roast
Ingredients (12 servings):
- 1 bunch celery, chopped
- 3 large onions, chopped
- 1 medium green bell pepper, chopped
- 1 cups ketchup
- cup water
- 3 tablespoons barbeque sauce
- 3 tablespoons cider vinegar
- 1 teaspoon hot pepper sauce
- 2 teaspoons chili powder
- 2 tablespoons salt
- 1 teaspoon pepper
- 6 pounds boneless beef chuck roast, trimmed and chopped
Directions:
- In a large bowl, combine the chopped celery, onions, green pepper, ketchup, water, barbeque sauce, vinegar, and hot pepper sauce. Stir well to mix.
- Season the mixture with chili powder, salt, and pepper, and stir again to incorporate the spices evenly.
- Place the beef chuck roast in a slow cooker and pour the prepared sauce mixture over the roast, ensuring it is well-covered.
- Cover the slow cooker with its lid and set it to cook on Low for approximately 12 hours, allowing the flavors to meld and the meat to become tender.
- After the cooking time is complete, use a fork to shred the beef into smaller pieces, mixing it into the sauce.
- Increase the heat to High on the slow cooker and continue cooking until most of the liquid has reduced, about another 30-60 minutes.
- Once the sauce has thickened and the beef is tender and fully shredded, your dish is ready to serve!
