Whether you're craving a cozy meal for the family or want to impress your guests, this casserole is the perfect solution.

How to Make Cabbage Roll Casserole:

  1. Preheat the oven: Begin by preheating your oven to 350F (175C) and gather all your ingredients for easy access.
  2. Cook the ground beef: In a large skillet, heat over medium-high heat. Add the ground beef and cook, stirring occasionally, until browned and crumbled, about 5-7 minutes. Once cooked, drain the grease and discard it.
  3. Prepare the casserole mixture: In a large mixing bowl, combine the chopped cabbage, tomato sauce, chopped onion, uncooked rice, and salt. Stir in the cooked ground beef until well combined.
  4. Assemble the casserole: Transfer the beef and cabbage mixture into a 9x13-inch baking dish. Pour the beef broth over the top of the mixture, spreading it evenly.
  5. Cover and bake: Cover the dish with aluminum foil and place it in the preheated oven. Bake for 1 hour, then remove the foil and stir the casserole.
  6. Continue baking: Re-cover the casserole with foil and continue baking for an additional 20-30 minutes until the cabbage is tender and the rice is fully cooked.
  7. Serve and enjoy: Once cooked, remove the casserole from the oven and serve hot. Enjoy the rich, flavorful layers!

What to Serve with Cabbage Roll Casserole:

To complement this dish, serve with light sides like a creamy kale salad or oven-roasted carrots. For a more hearty meal, consider adding a side of German potato salad.

Refrigerate any leftover casserole in an airtight for up to four days. To reheat, place the casserole in a 300F oven, covering it with foil to prevent over-browning. Heat until warm throughout.

How to Freeze Cabbage Roll Casserole:

This casserole can be frozen for up to three months. Make sure to store it in an airtight , and if you like, divide the leftovers into portions before freezing for easier reheating.

This is so GOOD & EASY !!! I make it even simpler by putting it all in a crockpot...only use long cooking rice.

I thought this recipe was absolutely delicious. It was so tasty I had to have a second helping. Like some of the others, I also cut the recipe in half, using 1 lb. ground beef, 1/2 an onion, 1/2 a large head of cabbage, 1 can of beef broth (14 oz), 2 cans (8 oz) of tomato sauce and 1 cup of rice. The only extra seasoning I added was salt. I turned up the temperature to 400 and found it was done in an hour. I will definitely be making this again!

This casserole was easy to make and delicious. I did add a variety of spices, as suggested in earlier reviews, including Worstechsire sauce, a dash of hot sauce, garlic and nutmeg and a little vinegar to draw out the tomatoes. I used ground turkey to reduce the fat, and, possibly due to using drier meat, needed to add another cup and a half of tomato sauce. I served it to company and they kept going back for 'just another bite' well after we left the table and took a copy of the recipe home with them. This recipe will make many appearances at my table.

I made this last night. I added some garlic powder and some pepper to the meat while it was cooking. I also cooked the onions with the meat. Stirred the rice into the pot with the meat and onions. In a large, deep, foil roasting pan, I put a layer of cabbage and covered that with the meat/rice mixture. I poured a cup of beef broth over the top and then added the spaghetti sauce on top of everything. Covered with foil, and baked for 45 minutes. After 45 min, I took it out of the oven, stirred it all together and then turned the oven down to 225 because I had to go out for an hour. When we came back and had a taste test, it was PERFECT. My BF loves my cooking, but he had 2 servings for his taste test, took some for his lunch today and wants me to make it again on the weekend! I haven't seem him rave like this in a long time. Thank you Nancy!!

Used V8 juice in the place of tomato sauce. Added a clove of minced garlic. Also used a bag of shredded cabbage as a shortcut. Tasted great, will have again. Thanks !

Please, please, please, pre-cook your rice, using beef broth as the liquid. Then YOU control the beef/rice ratio by eyeballing and preferences. This way, you only need about 45-60 minutes total cook time. I season by using garlic, Italian seasoning blend, and salt to taste. Hope this helps.

I loved this dish!! So easy to prepare. I actually made it in my ninja foodi slow cooker. It has a sear/saute setting. So I did everything right on the slow cooker. Delicious!! Everything about stuffed cabbage just easier.

I decided to make this in a pot as others had done. And I halved the recipe. I browned the beef and the onions together and added garlic powder, pepper, salt and oregano. Once the beef was browned, I added 15 ounces of the tomato sauce, one can of beef broth, a half cup of uncooked rice and a tablespoon of brown sugar to cut out the acidity of the tomato sauce. Once this mixture came to a simmer, I added about a half of a shredded cabbage. Turned the heat down, covered the pot and let the cabbage steam for 15 minutes. My 5 year old and I like it best with sour cream. This was really fast and I’ll probably make it again.

I halved the recipe and it easily fed a family of 5 (as a side dish)... with leftovers. I fried my cabbage and diced onion & minced garlic (until tender) and used 2 c of precooked leftover rice instead of uncooked rice. It was fully cooked and ready to eat in 40 minutes. I used a 1/2 can of diced tomatoes and a tin of tomato soup and 1/2 c of milk. Lots of salt and pepper... Very Good 👍

I read some 1 and 2 star reviews before I tried this and decided I was going to change the recipe. I ended up adding... 1 - 29 oz container of water 1 teaspoon of garlic 1 teaspoon of paprika 1 large container of sauerkraut. I also sauted the onions and then added the beef to the pan & cooked the rice beforehand. (It's ok if it's just a little on the hard side, it's going to continue to cook with the dish in the oven.) No way is this going to fit into 1, 9 x 11 dish! I used 1 large and 1 medium dutch oven and this barely fit. I also cooked this for an hour, gave it a good stir and then let it cook for another hour. (I like the cabbage nice and buttery soft.) Use the water and tomato sauce to cover the mixture, otherwise the rice and cabbage will not soften and cook throughly. (A lot of folks complained about this.) There are plenty of leftovers so be ready to freeze some once it cools off. My husband said it was good & his Gram was Czechoslovakian and made this for him when he was little. (This was my litmus test.) It was easier than boiling the head of cabbage and rolling each leaf up individually. Give this a try with your own additions and enjoy!

This recipe is delicious. I made it in my Instant Pot and cut the recipe in half. I browned the meat on sautee mode. Then I added dried onions (instead of cutting onions) and theother ingredients and set the timer for about 14 minutes. Probably could have had a shorter cooking time. Very good recipe!

Awesome recipe! So much easier than cabbage rolls. I was fortunate enough to have just picked up half of a bushel of san marzano tomatoes. So cooked them down and used this instead of canned tomatoes. Also had fresh onions and garlic too. Living in a country community has it’s benefits 🙏

I added lots of Pennzeys roasted garlic to the meat. Also used brown rice, which required an extra 30 min cook time. Next time I’ll reduce tomato sauce by 1/3 b/c I don’t like tomatoey dishes. Don’t forget to cover your dish in the oven to protect cabbage from getting burned.

I fry the chopped onions with the meat. Instead of chopping up a head of cabbage, I buy the cole slaw mix and boil this for about 10 min first as I found the cabbage stays too crunchy even after baking for an hour and a half. I also add some celery seed, garlic & onion powder, salt & pepper, paprika and a 1/2 tsp of white sugar to the mixture to cut the acidity of the tomato sauce. Tastes just like cabbage rolls, without all the work.

I boil the chopped cabbage for about10 minutes to make it softer before adding it to the beef and rice. We like tomato soup for the sauce.

Excellent and delicious. This is a new favorite and it's easy and less effort than actually making cabbage rolls, and we're all about easy these days
