Skillet-Braised Brussels Sprouts Recipe
If you're searching for a mouthwatering way to serve Brussels sprouts, look no further than these flavorful braised Brussels sprouts. Cooked in bacon fat, then braised and finished with a tangy balsamic glaze, this dish is anything but dull. Your family will beg for this recipe time and again!
Follow these easy steps to create a dish your taste buds will thank you for:
- Cook the Bacon: Start by heating a large cast-iron skillet over medium heat. Add the bacon and cook it for 5 to 7 minutes, or until it reaches your desired crispiness. Once cooked, transfer the bacon to a plate lined with paper towels, but make sure to save the bacon grease in the skillet for later use.
- Saut the Brussels Sprouts: Place the Brussels sprouts in the skillet with the cut sides facing down. Raise the heat to medium-high and saut the sprouts in the bacon grease for 2 to 3 minutes, or until they begin to lightly brown. Add the thinly sliced garlic and cook for another 30 seconds until fragrant.
- Braise the Brussels Sprouts: Pour in the chicken stock and cover the skillet with a lid. Let it simmer for 3 to 5 minutes, or until the Brussels sprouts turn a vibrant green. Once the sprouts have brightened up, remove the lid and continue simmering for an additional 3 to 5 minutes, until the liquid has evaporated and the sprouts are tender to your liking.
- Finish the Dish: Remove the skillet from heat. Add the reserved bacon, butter, balsamic vinegar, salt, and pepper. Stir until the butter melts, blending all the flavors together.
How Long Should You Braise Brussels Sprouts? Braise them for about 10 minutes in total. You can adjust the cooking time slightly depending on how soft or firm you like your Brussels sprouts. If you prefer them softer, feel free to add a little more stock and braise them longer.
What to Serve with Braised Brussels Sprouts: These braised Brussels sprouts make an excellent side for steak, chicken, or any protein of your choice. Here are a few meal ideas to pair them with:

- 1 pound Brussels sprouts, trimmed and halved lengthwise
- 1 clove garlic, thinly sliced (or more to taste)
- 1/2 cup chicken stock
- 1 tablespoon butter (or to taste)
- 1 tablespoon balsamic vinegar (or to taste)
- Salt and ground black pepper, to taste
Step-by-Step Directions:
- In a large cast-iron skillet, cook the bacon over medium heat for 5 to 7 minutes until crisp. Transfer it to a plate lined with paper towels, reserving the bacon grease in the skillet.
- Add the Brussels sprouts to the skillet, cut sides down. Turn the heat to medium-high and saut for 2 to 3 minutes until browned. Add garlic and cook for another 30 seconds until fragrant.
- Pour in the chicken stock, cover the skillet, and simmer for 3 to 5 minutes until the sprouts are bright green. Remove the lid and continue simmering for 3 to 5 more minutes, until the liquid has evaporated and the Brussels sprouts are tender.
- Remove from heat. Stir in the bacon, butter, balsamic vinegar, salt, and pepper until the butter is melted and the flavors are well combined.
Recipe Tips:
- For evenly browned sprouts, make sure to use a skillet large enough to cook them in a single layer.
- If you like your Brussels sprouts softer, feel free to add extra stock and braise them a little longer.

Made it as written and it was very good. But I felt that it could do with less bacon/drippings and would still be good. The method of preparations was simple. I think that next time, and there will be a next time, that I would reduce the amount of the bacon/drippings and the butter. With all the fat that's in this recipe, it turns a very healthy side dish into one that's high in calories and fats.

This was really good. I didn't use all the bacon grease because it seemed like too much. My husband said they tasted like something you get at a restaurant. Will definitely make again!

The high heat on the Brussels when you brown them is key. I browned them really well before adding the chicken stock. The dish was a hit with my mom who generally hates Brussels.

Delicious! I slightly modified the recipe by sautéing the Brussels sprouts with a chopped onion and I added about half the butter and reduced the amount of vinegar slightly to adjust for the butter when making the vinegar glaze. I will be making this one again!

This was sooo good and I DIDNT have the bacon! Followed exact minus the bacon and we still loved it! So I basically started at step 3. Because I didn’t have bacon, did chop a small onion - gave them a few min head start before adding the garlic and following the rest. If this was well received WITHOUT the bacon, I can’t imagine how much we will love when I do?!? Which I will….next time! Thanks Kyle! A core, good side dish!

Very tasty and easy to make. I only cut two slices of bacon and tossed the Brussels in olive oil before adding to pan. Turned the heat up high to get a good char, and then just enough chicken stock to create steam to finish the cooking (to avoid sogginess). Threw in some fresh corn at the end. I will definitely make this again.

I used turkey bacon so I didn't have the fat to start. I used a little olive oil in the pan to saute the brussel sprouts. Can out great.

Amazing. I only added diced onions cooking them in the bacon grease after I pulled the bacon out. Also I didn't have chicken stock so I just used water instead. Outstanding recipe

I love Brussels Sprouts, but most of the family not so much. Since it was just my hubs and I this year, decided to make them with bacon. Wonderful and easy! Saved a bit of the bacon grease to saute in, and added a splash of white wine with chicken broth. They accidently got a little more caramelized than they should, but did not affect taste a bit. So much better than the normal canned corn or frozen broccoli and cheese!

Delicious and quick! I used what I had on hand, which was beef broth instead of chicken stock. I should have made more!

Even skipping the bacon it’s good! Not a fan of bacon grease, so I didn’t use it, but did everything else and I wasn’t unhappy with the results. Tasty, tender and the balsamic brought it all together. Excellent dish.

I hate Brussels sprouts. I hate the smell of the cooking or just tying in the kitchen. But I cooked this recipe , added some dried cranberries and flaked almonds towards the finish and it was a great success. My wife loved it. Looks like I’ll have to do it more often. (I still couldn’t bring myself to try it.)
