Chicken Dorito Casserole Recipe
Ingredients
- 1 teaspoon Creole seasoning (such as Tony Chachere's), or to taste
- 2 pounds skinless, boneless chicken breast halves, cut into chunks
- 1 (10.75 ounce) can cream of mushroom soup
- 1 (10 ounce) can diced tomatoes with green chile peppers (such as RO*TEL)
- 1 (14 ounce) can whole kernel corn
- 1 (14.5 ounce) package nacho cheese-flavored tortilla chips (such as Doritos)
- 1 (8 ounce) package shredded Mexican cheese blend
Directions
- Bring a saucepan of water to a boil and add Creole seasoning. Once boiling, cook the chicken chunks in the seasoned water for 10 to 15 minutes, or until the chicken is no longer pink in the center. Drain the chicken and shred it into bite-sized pieces.
- Preheat your oven to 350F (175C).
- In a large bowl, combine the cream of mushroom soup, diced tomatoes with green chile peppers, and corn. Mix well to ensure an even consistency.
- In a 9x13-inch casserole dish, spread half of the nacho cheese-flavored tortilla chips evenly across the bottom. Then, layer half of the shredded chicken on top of the chips, followed by half of the mushroom soup mixture, and half of the shredded Mexican cheese blend.
- Repeat the layering process with the remaining tortilla chips, chicken, mushroom soup mixture, and cheese.
- Place the casserole dish in the preheated oven and bake for approximately 30 minutes, or until the casserole is bubbling and the cheese has melted and turned golden brown.

this is also good made with cream of chicken soup, no corn and I cut my chicken and cook in pan with butter.. Mix chicken, soup, rotel together and put over chips then a layer on top with cheese bake until cheese is melted :)

I made it with Cream of Chicken soup instead of Mushroom Soup, added scallions and salsa I didn’t have tomatoes. Instead of layering I put Doritos on the bottom and mixed the rest and poured on top. The last 5 minutes I added more cheese to the top. My family loved it, easy recipe.

My picky family loved this it was a total hit! I did make a few changes to suit our taste. I used a chicken taco seasoning packet instead of creole mix to boil the chicken, reserving some of the seasoning packet to add to the chicken afterward. I used cream of chicken soup instead of mushroom and I added cilantro cumin onion and garlic powder to the soup/corn/tomato mixture. I also used Cool Ranch Doritos instead of Nacho cheese flavor. I added the reserved seasoning to a few tablespoons of sour cream and mixed it in with the shredded chicken. Served it with sour cream and chopped green onions.

I can never follow a recipe to the letter, I always add something! 1st time around I almost followed to the letter - changed Creole seasoning (not a fan) to Mexican mix (like a mild taco type seasoning) and used Cream of Chicken instead of mushroom. Turned out good topped with some shredded lettuce and sour cream. 2nd time I used ground beef with my alternates and it was better. 3rd time I went crazy and used the chicken but Cool Ranch Dorritos-the BOMB!!!

Made this using taco meat and the cream of mushroom soup. Topped with lettuce and tomato and sour cream. Was a yummy taco salad! Kids loved it. Found out new taco Tuesday recipe. Or for when you have leftover chicken or taco meat. Will do with chicken and fajita seasoning next time.

This was pretty good! I added about 1/2 tsp. of cayenne (what Chef John would do), tsp of cumin, tsp of paprika, and 1\2 tsp garlic powder. I would make this again.

This is a great, easy to put together recipe. The only change that I made was using Cream of Chicken Soup instead of the Cream of Mushroom Soup. Simply because I did not have the latter on hand.

I added a can of cream of chicken...& used the four cheese Mexican Philadelphia style .... I must I'm a big fan of Mexican food... & this is quick & easy with lots of favor...I like I like....

Just made this dish tonight! Used twice the amount of cheese to make it extra cheesy and also cream of chicken instead of mushroom. Came out great with lots of leftovers.

This was good, but the recipe I've been tweaking for 30 years is better. Just sayin'. 2 lbs. (or more) Chicken (whole, thighs, or breasts. I'll boil a whole chicken; I'll Instant Pot thighs or breasts) 1 onion, a few cloves of garlic (you choose your level), 1 large can green enchilada sauce, corn tortilla chips (something a little bigger than a regular size bag of Doritos, crushed), 1-1/2lb. good cheddar cheese, (shredded), 1 can cream of mushroom, 1 can cream of chicken, 1 can Rotel. I like to cook the chicken with onion and garlic in the green enchilada sauce in the Instant Pot (stove top or oven would work, too). Shred or dice the chicken once done (reserve the sauce so you can thin the soup/Rotel mix till the mix smoothly falls off the mixing spoon. Also, you can add some of the cooked onions and garlic to the casserole if you wish to increase the flavor). Mix the soups and the Rotel. Layer crushed chips, sauce, chicken, then cheese in the casserole dish. Should be 2 layers. For the cheese, 1/3 cheese on first layer; 2/3 cheese on the top. Bake at 350° for 30 minutes covered with foil. Uncover and cook longer, approx. another 30 minutes, it's done when the cheese is perfectly browned. Perfect side is buttery corn, kernels or on the cob.

I love it so simple and effective. I have experimented a bit and added bottled capsicum of a bit of extra I did add onions but the do not work at all!

Way too many chips for our tastes. Kids liked it okay. I think they got more chips in a week than they did the rest of the year!

I followed this recipe but used cream of chicken soup and did not use the corn (due to picky children). The results were just ok Adding more Creole spice to the water you boil the chicken in would have been better Vague instructions so 1 tbsp to how much water? I covered the chicken with water and when finished cooking, I couldn’t taste any of the seasoning Also, the casserole was drier than I like Needed more rotel/cream of chicken to saturate the chicken and chips It’s a good recipe...with a little tweaking :)

It was great and my husband loves it! It's even better as left overs the next day! I didn't make any changes to the recipe but thought of added refried beans the next time.
