Creamy Irish Potato Soup Recipe

- 2 tablespoons butter or margarine
- 4 medium green onions, sliced
- 1 stalk celery, sliced
- 3 medium potatoes, peeled and sliced 1/4 inch thick
- 1 cups Swanson Chicken Broth or Swanson Certified Organic Chicken Broth or Swanson Natural Goodness Chicken Broth
- 1 teaspoon ground black pepper
- 1 cups milk
Directions
- Step 1: In a 3-quart saucepan, melt the butter over medium heat.
- Step 2: Add the sliced green onions and celery. Cook and stir for 5 to 7 minutes until the onions become translucent.
- Step 3: Add the potatoes, broth, and black pepper. Bring the mixture to a boil.
- Step 4: Once boiling, reduce the heat to low. Cover the saucepan and let it simmer for about 15 minutes, or until the potatoes are tender.
- Step 5: Add the milk to the saucepan and use an immersion blender to blend the mixture until smooth.
- Step 6: Continue cooking for another 3 to 5 minutes until the soup is heated through.
