Air Fryer Corn on The Cob

History of the Dish

Though the concept of roasting corn on the cob has ancient roots in various cultures, the air fryer corn on the cob is a modern twist, made popular with the rise of air fryers in contemporary kitchens. Corn has long been a staple in Native American diets and has spread across the world, adapting to regional tastes. The practice of grilling or roasting corn, particularly with flavorful toppings, is commonly associated with Mexican street food. This recipe, with its mayonnaise, cotija cheese, chili powder, and lime, draws heavily from Elotea beloved Mexican street food snack often served by street vendors in the bustling markets of Mexico City.

Regional Variations

Air fryer corn on the cob, much like traditional Mexican elote, varies by region, particularly in the types of cheese and seasonings used. While cotija cheese is a popular choice in many regions, some variations incorporate queso fresco or even a spicy, tangy cream sauce. In coastal areas, fresh seafood toppings like shrimp or crab can sometimes be added. The use of lime and chili powder is ubiquitous, but other regions may introduce additional ingredients, such as garlic or smoked paprika, to further enhance the flavor.

How It Differs from Similar Dishes

What sets air fryer corn on the cob apart from other roasted or grilled corn dishes is the cooking method itself. The air fryer offers a quick, easy way to achieve the crispy, tender texture typically found in traditional roasting or grilling, without the need for an open flame or extensive cooking time. Unlike typical boiled corn or simply grilled corn on the cob, the air fryer method provides a golden, crisp exterior while retaining the corns sweet, tender kernels. The addition of mayonnaise, cotija cheese, and chili powder makes it richer and spicier, offering a contrast to the more straightforward seasoning of traditional boiled corn.

Where It Is Typically Served

Air fryer corn on the cob is often served as a side dish at casual gatherings, barbecues, or as part of a larger Mexican-inspired meal. It can also be enjoyed as a snack or appetizer at parties or even street food stalls in urban areas. Its appeal lies in its ability to be both an easy-to-make treat and an indulgent dish, perfect for summer cookouts or weeknight dinners. As a popular choice for outdoor eating, it pairs beautifully with other Mexican dishes like tacos, quesadillas, or grilled meats.

Fun Facts About Corn and Air Frying

Did you know that corn, or maize, was first domesticated by indigenous peoples of southern Mexico over 9,000 years ago? Corn is not only a major food crop but also an important cultural symbol in many indigenous cultures. When prepared in an air fryer, corn on the cob cooks quickly, with minimal oil or butter, making it a healthier alternative to more traditional methods. The air fryer method also locks in the corns natural sweetness while providing a satisfying crunch on the outside. Its a clever innovation thats become a staple in modern kitchens, combining convenience and flavor.

Another fun tidbit is that cotija cheese, a crucial ingredient in this dish, is often called "the Mexican Parmesan" because of its similar texture and salty flavor. However, cotija has a much milder, less pungent taste than its Italian counterpart, making it perfect for dishes like this, where its subtle flavor complements the corn and the tangy mayo-lime mixture.

If you have leftover corn, store it in an airtight container in the refrigerator for up to 3 days. Reheat in the air fryer for a few minutes to regain its crispiness, or microwave for a softer result.

You can prepare the corn by coating it with the mayo and cheese mixture in advance. Store the coated corn in the refrigerator for up to a couple of hours before air frying. However, for the best flavor, it’s recommended to cook it right before serving.

If you want to spice things up, try adding some hot sauce to the mayo mixture or use a spicier chili powder. You could also sprinkle a little cayenne pepper on the corn before serving.

I used Mexican seasoning instead of the chili powder and it was wonderful. The only way to make this type of corn.

I am absolutely in love with the taste of this corn on the cob. In the air fryer, 1 to 2 minutes to prepare and 8 to cook. Couldn't be simpler and I cannot get enough! I have been out of cotija cheese even and just grated some havarti and it was just as delicious. Today I even used had some large grate white cheddar and was still Head over heels for the flavor! Try it and you'll never go back to regular corn on the cob!

I mix sour cream with Mayo equal parts. You can use parm as a substitute cheese. Everything else the same. Delish!

I never follow recipes step by step so I tweaked mine using some suggestions below. I mixed half sour cream, half Mayo and I had some garlic aoili that I added. I use Sazon in the orange packet, tajin, smoked paprika, chili powder and lime for the seasoning. Had enough cheese sauce leftover to finish making my creamed collard greens. 10 out of 10!!!

Fine as is. Easy. Quick. Did several ways in batches of two. Here goes: 1. As is. Lovely and disappeared with teenage boys, girl and mom. 2. Substitute for more seasoned taste: sriracha seasoning, paprika, and chili powder 1/4 tsp each - fine shred pepperjack and parmesan after the cook still melts on heated corn. 3. With leftover boiled corn on cob, 5 minutes or less in air fryer and was possibly better than the raw corn on cob. No crunch but corn better. Raw corn gets a popcorny crunch feel which wife preferred so both are winners. August September corn season in Indiana is perfect. Rich recipe and higher calorie so treat the neighbors every so often. Air fryer wins again. Note: The sauce does not "melt" so have to coat all around the cob. I pulled drip pan after 2 minutes to get best circulation to cook the 'bottom' of the cob evenly.

This is seriously good! My whole family loved it, it's easy to make and hard to mess up. I'll be making this often when corn is in season in my area!

I really enjoyed the simplicity of this recipe. I replaced the cheese with parmesan.Although I felt that maybe I could add a little more cheese. There wasn't a lot of flavor.. but ill definitely do it again. I so put it in a little longer than 8 minutes so that it wasnt too crunchy.
