Honey-Chipotle Chicken Recipe

Ingredients

  • cup honey
  • 6 cloves garlic
  • 4 chipotle peppers in adobo sauce
  • 6 skinless, boneless chicken breasts (or more to taste)
  • 2 (15 ounce) cans black beans, drained and rinsed

Directions

  1. Start by blending the honey, garlic, and chipotle peppers in adobo sauce in a food processor until smooth.
  2. Place the chicken breasts in the bottom of a slow cooker and pour the honey-chipotle sauce over the chicken.
  3. Set the slow cooker to low heat and cook the chicken for 5 hours.
  4. After 5 hours, transfer the chicken to a bowl and shred it using two forks.
  5. Return the shredded chicken to the slow cooker and stir in the black beans.
  6. Let the mixture continue to cook on low for an additional 30 minutes, until fully cooked through.

Cook's Note

This dish can be used as a filling for burritos with your favorite burrito fixings. If you prefer, skip the beans and serve the chicken on a bun for a delicious sandwich option.
