  • 2 pounds boneless lamb chops
  • Salt and freshly ground black pepper to taste
  • 2 tablespoons vegetable oil
  • cup Irish stout beer (such as Guinness)
  • 1 pound new potatoes
  • 1 pound baby carrots
  • 1 (8 ounce) package pearl onions
  • 4 cups lamb stock
  • 2 tablespoons brown roux
  • 2 tablespoons finely chopped parsley

Directions

Follow these steps to prepare the dish:

  1. Season lamb chops with salt and pepper to taste.
  2. Heat the vegetable oil in a large Dutch oven over medium heat until it is hot but not smoking.
  3. Add the lamb chops to the pot and sear each side for 2 to 3 minutes, until browned. Remove the chops from the pot and set them aside.
  4. Pour the Irish stout beer into the pot and cook for about 1 minute. Use a wooden spoon to scrape up any browned bits from the bottom of the pot.
  5. Return the lamb chops to the pot, stirring gently to coat them in the beer.
  6. In a separate mixing bowl, toss the new potatoes, baby carrots, and pearl onions with salt and pepper. Add these vegetables to the pot.
  7. Pour in the lamb stock to cover the ingredients and bring the mixture to a boil.
  8. Once boiling, cover the pot, reduce the heat to medium-low, and simmer for about 2 hours, or until the lamb becomes tender and falls off the bone.
  9. Stir in the brown roux and continue to cook for an additional 10 minutes to thicken the sauce.
  10. Once the sauce has thickened, stir in the chopped parsley for a burst of freshness.
  11. Spoon the lamb and vegetable mixture into serving bowls, ensuring even portions of lamb and vegetables in each bowl.

Cook's Notes

Make sure your lamb chops are about 1 inch thick for optimal searing. You can use any dark beer you prefer for the recipe. Irish stout beer like Guinness is ideal for rich flavor.
