Fajita Beef and Rice Skillet
Ingredients
- 1 tablespoon vegetable oil
- 1 pound ground beef
- 1 tablespoon fajita seasoning
- 1 (15 ounce) can pinto beans, drained and rinsed
- 1 (8 ounce) jar salsa
- 1 cup cooked brown rice
- cup shredded Mexican cheese blend
Directions
- Heat the vegetable oil in a large skillet over medium-high heat.
- Once the oil is hot, add the ground beef. Cook and stir for 5 to 10 minutes until the beef is browned and crumbled. Drain any excess grease.
- Stir in the fajita seasoning, ensuring the beef is evenly coated with the spices.
- Add the drained pinto beans, salsa, and cooked brown rice to the skillet. Mix everything together until well combined.
- Sprinkle the shredded Mexican cheese blend over the top of the beef mixture.
- Reduce the heat to medium-low and allow the dish to cook for a few more minutes, or until the cheese has melted and everything is heated through.
