Fajita Beef and Rice Skillet

Ingredients

  • 1 tablespoon vegetable oil
  • 1 pound ground beef
  • 1 tablespoon fajita seasoning
  • 1 (15 ounce) can pinto beans, drained and rinsed
  • 1 (8 ounce) jar salsa
  • 1 cup cooked brown rice
  • cup shredded Mexican cheese blend

Directions

  1. Heat the vegetable oil in a large skillet over medium-high heat.
  2. Once the oil is hot, add the ground beef. Cook and stir for 5 to 10 minutes until the beef is browned and crumbled. Drain any excess grease.
  3. Stir in the fajita seasoning, ensuring the beef is evenly coated with the spices.
  4. Add the drained pinto beans, salsa, and cooked brown rice to the skillet. Mix everything together until well combined.
  5. Sprinkle the shredded Mexican cheese blend over the top of the beef mixture.
  6. Reduce the heat to medium-low and allow the dish to cook for a few more minutes, or until the cheese has melted and everything is heated through.
