Tater Tot Taco Casserole Recipe

Ingredients

- Cooking spray
- 1 pound ground beef
- 1 (16 ounce) bag frozen whole-kernel corn with red and green bell peppers
- 1 (12 ounce) can black beans, rinsed and drained
- 1 small onion, diced
- 1 clove garlic, minced
- 1 (1 ounce) packet taco seasoning mix
- 1 (12 ounce) bag shredded Mexican cheese blend
- 1 (16 ounce) package frozen bite-sized potato nuggets (such as Tater Tots)
- 1 (12 fluid ounce) can enchilada sauce
Directions
- Preheat the oven to 375F (190C). Prepare a 9x13-inch baking dish by spraying it lightly with cooking spray.
- Cook the ground beef in a skillet over medium heat for 5-7 minutes, or until completely browned. Once cooked, drain excess fat if necessary.
- Add the frozen corn, black beans, diced onion, minced garlic, and taco seasoning mix to the beef. Stir and cook for an additional 10 minutes until well combined and heated through. Set the mixture aside to cool slightly.
- In a large mixing bowl, combine the beef mixture with about of the shredded Mexican cheese blend and the frozen potato nuggets. Stir until all ingredients are evenly distributed.
- Pour approximately of the enchilada sauce into the bottom of the prepared baking dish.
- Transfer the tater tot mixture into the baking dish, spreading it out evenly and lightly pressing it down to form a solid layer.
- Pour the remaining enchilada sauce over the top of the potato mixture, ensuring it's evenly coated.
- Bake in the preheated oven for 40 minutes, or until the casserole is heated through and the edges begin to bubble.
- Sprinkle the remaining shredded cheese over the casserole and return it to the oven for an additional 5 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let the casserole cool for a few minutes before serving. Enjoy!
Recipe Tip
Some kids may not enjoy onion or garlic. These can be omitted from the recipe if preferred.
