Keto Spinach-Artichoke Chicken Recipe

Ingredients

  • (10 ounce) package frozen spinach
  • 1 (4 ounce) package cream cheese, softened
  • (14 ounce) can quartered artichoke hearts, drained and chopped
  • cup shredded Parmesan cheese
  • cup mayonnaise
  • teaspoon garlic powder
  • teaspoon salt
  • 4 (8 ounce) boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • cup shredded mozzarella cheese

Directions

  1. Microwave the frozen spinach in a medium bowl until heated through, about 2 to 3 minutes. Allow it to cool slightly, then squeeze out any excess moisture.
  2. Return the spinach to the bowl and mix in the cream cheese, chopped artichoke hearts, Parmesan cheese, mayonnaise, garlic powder, and salt. Set aside.
  3. Pound the chicken breasts to an even thickness, no more than 1-inch thick. Season with salt and pepper on both sides.
  4. Preheat your oven to 375F (190C).
  5. Heat olive oil in a large skillet over medium-high heat. Brown the chicken breasts in the hot oil for 2 to 3 minutes per side. If needed, work in batches to avoid overcrowding the pan.
  6. Transfer the browned chicken breasts to a large baking dish.
  7. Spread the spinach-artichoke mixture evenly over each chicken breast.
  8. Bake in the preheated oven until the chicken is cooked through, no longer pink in the center, and the juices run clear, about 20 to 22 minutes. To be sure, use an instant-read thermometer the internal temperature should be at least 165F (74C).
  9. Top each chicken breast with shredded mozzarella cheese and continue baking for an additional 1 to 2 minutes, until the cheese has melted and is bubbly.

Love this dish! Try not to overcook between the browning in the pan and the baking, very high heat brown.

Loved how easy this recipe is. I used fresh spinach and just wilted it in the skillet before browning the chicken. (No need to "dry" the spinach with this method.) I used the whole can of artichoke hearts and more spinach. Kept the same measurements of everything else in the recipe. Great for company meals as everything can be prepped before.

Delicious! Even more surprised the entire family loved it. I did use a giant bunch of fresh spinach in place of the frozen. Browned the chicken then Sautéd the spinach in same pan (after chicken was removed). So good!!

This is an excellent recipe! Company worthy! Used chicken thighs (personal preference) did not pound them. Browned thighs in olive oil in cast iron skillet, added the artichoke mix and baked for 18 minutes. Perfect!

Only changes made were to us fresh spinach and fresh minced garlic. Sauteed both together and let cool before adding to the rest of the ingredients. No need to squeeze the spinach. Simple and delicious!

I don’t often review as I make too many changes to a recipe but I felt I was close enough to on this one. I used about 3/4 of a bag of fresh baby spinach and wilted in the microwave a couple of minutes. I used paper towel to squeeze out some moisture from the hearts and spinach. I used closer to a cup of mozzarella, otherwise I followed the recipe. I was concerned it would not have enough flavour for me but I was wrong! It was delicious and so easy! I will certainly be making this again. I’m only sorry I did not take a picture.

Thank you for this recipe! It was delicious and my family looooved it! I was in a rush so I only used the frying pan to cook the chicken first, add the cream sauce and finish off with parm cheese, it was amazing!!

Tasty! I used the exact recipe except I baked it in the same skillet rather than dirty a baking dish. You can make extra topping and use it as a dip with crackers.

I had been dying to try this recipe. When I found it, I didn't have a proper kitchen for the prep area much less anything else. Now that I do, this was the first recipe I tried and it came out fabulous! My family was eating it up and making yummy sounds. This recipe is a keeper! P.S. I substituted the spinach for broccoli for my mother in her chicken breast. She loves spinach but it doesn't love her.

It is easy and delicious, even without the cream cheese. (my husband doesn’t like it except in a cheesecake!). I added a small amount of heavy cream to keep it moist. We loved it, and it is in my “do it again” file!

My wife and I have been on a “sorta” keto diet for the past year. We are always looking for keto and low carb dishes. I cooked this one last night and it was absolutely delicious. I made the entire recipe and used two fairly large chicken breasts. Will have leftovers for lunch today. Strictly followed the recipe. It’s a keeper.
