Sophia's Homemade Seafood Stock Recipe

Ingredients

- 1 tablespoon olive oil
- 2 large onions, coarsely chopped
- 1 bunch celery, coarsely chopped
- 4 large carrots, coarsely chopped
- 2 large green bell peppers, coarsely chopped
- 1 bunch fresh cilantro
- bunch fresh oregano
- 2 bay leaves
- 3 (1 liter) bottles water
- pound fish parts (such as bones, spine, and tail)
- 2 large fish heads
- 2 cups clam juice
- 1 teaspoon whole black peppercorns
Directions
- Heat olive oil over medium-high heat in a large stockpot.
- Cook and stir onions in the hot oil for about 5 minutes, or until softened.
- Add the coarsely chopped celery, carrots, and bell peppers, and saut for another 5 minutes.
- Stir in the fresh cilantro, oregano, and bay leaves. Continue to saut for 2 more minutes to release the flavors.
- Add the water, fish parts, fish heads, clam juice, and black peppercorns to the pot.
- Bring the mixture to a boil, then reduce the heat to low and allow it to simmer, uncovered, for at least 4 hours.
- After 4 hours, turn off the heat and let the stock cool for approximately 30 minutes.
- Using a skimmer or slotted spoon, remove the large solid items (like fish parts and vegetables) from the stock.
- Strain the stock through a fine-mesh strainer into a large , making sure that all fish bones have been removed.
- The stock is now ready for use or can be stored in the freezer for future use.
