Nat's Shrimp and Veggie Stuffed Zucchini Recipe

Stuffed Zucchini with Shrimp and Mushrooms
Ingredients
- 1 extra large zucchini
- 4 tablespoons olive oil, divided
- 6 cloves garlic, finely chopped
- 1 shallot, finely chopped
- pound large shrimp, shelled, deveined, and cut in half
- 1 large tomato, peeled, seeded, and diced
- 8 cremini mushrooms, quartered
- cup grated Parmesan cheese
- 8 leaves fresh basil, torn
- Ground black pepper to taste
- Kosher salt to taste
- Garlic powder to taste
- 4 tablespoons grated Parmesan cheese, divided
Directions
- Preheat the oven's broiler and position the oven rack about 6 inches from the heat source. Grease a baking sheet.
- Cut the zucchini in half lengthwise and scoop out the seeds and pulp, leaving a thick shell of flesh. Brush both halves of the zucchini with 1 tablespoon of olive oil. Place the zucchini cut-side down on the prepared baking sheet. Bake for 5 to 10 minutes, until the zucchini is hot and begins to release moisture. Remove from the oven.
- Preheat the oven to 450F (230C).
- Heat 2 tablespoons of olive oil in a skillet over medium-low heat. Add the garlic and shallot, cooking and stirring until they are translucent, about 5 minutes. Remove from the heat and let cool.
- In a bowl, combine the remaining 1 tablespoon of olive oil, shrimp, tomato, mushrooms, cup of Parmesan cheese, basil, and the cooked garlic and shallot. Stir to mix well. Season with salt, pepper, and garlic powder to taste.
- Stuff the zucchini halves with the shrimp mixture. Sprinkle each zucchini with about 2 tablespoons of grated Parmesan cheese.
- Bake the stuffed zucchini in the preheated oven for about 20 minutes, until the cheese is browned and the filling is hot and cooked through.
