Stuffed Zucchini Casserole Recipe
Ingredients
- Nonstick cooking spray
- 4 medium zucchinis
- 1 pound ground beef
- 1 pound Italian sausage
- 1 small onion, chopped
- cup dried bread crumbs
- 1 large egg, beaten
- 1 (28 ounce) can crushed tomatoes
- 1 (10.75 ounce) can condensed tomato soup
- 1 cup water
Directions
Step 1: Preheat your oven to 350F (175C). Lightly coat a 9x13-inch baking dish with nonstick cooking spray.
Step 2: Cut each zucchini in half lengthwise. Use a large spoon to scoop out the seeds, setting aside approximately of them for later use. Discard the remaining seeds.
Step 3: In a mixing bowl, combine the ground beef, Italian sausage, chopped onion, bread crumbs, beaten egg, and reserved zucchini seeds. Mix until well combined.
Step 4: Stuff the zucchini halves with the meat mixture, piling it high over the tops. Arrange the stuffed zucchini in the prepared baking dish.
Step 5: In a separate bowl, combine the crushed tomatoes, tomato soup, and water. Stir well and generously spoon this mixture over the stuffed zucchinis.
Step 6: Place the dish in the oven and bake for about 45 minutes, or until the zucchini is tender and the filling is cooked through.
Cook's Note
For easier cleanup, consider placing a sheet of aluminum foil or a baking sheet underneath the baking dish in the oven. The dish may bubble over during cooking.
