Greek Green Bean Salad with Feta and Tomatoes Recipe

Cook Time: 15 minutes

Ingredients:

  • 1 pound fresh green beans, trimmed
  • cup olive oil
  • 2 tablespoons white balsamic vinegar
  • Salt and freshly ground black pepper to taste
  • cup chopped fresh parsley
  • 1 medium shallot, minced
  • 1 clove garlic, minced
  • 3 medium tomatoes, chopped
  • 2 ounces crumbled feta cheese

Directions:

  1. Bring a pot of lightly salted water to a boil. Add the green beans and cook until tender, about 10 to 15 minutes. Drain well and set aside.
  2. In a small bowl, whisk together the olive oil, white balsamic vinegar, salt, and black pepper. Stir in the chopped parsley, minced shallot, and garlic.
  3. In a large mixing bowl, combine the cooked green beans and chopped tomatoes.
  4. Pour the dressing over the beans and tomatoes, and toss gently to combine.
  5. Fold in the crumbled feta cheese.
  6. Let the salad sit for about 20 minutes to allow the flavors to meld before serving.

I cut the recipe down to one serving because I was using up leftover green beans and about 1/2 of a large tomato, so this was perfect. It made a good amount for two side servings, with a little left over. I didn't have white vinegar so just used regular balsamic, also substituted red onion for the shallot, and we had no feta but that would have been wonderful. Thank you!

This was delicious! Was looking for a new cold side dish and this hit the spot! Swapped out the shallots for red onion and used grape tomatoes.

So simple yet so good! My husband even raved about it. I used red onion instead of shallot and grape tomatoes as it's what I had on hand. Dressing is delicious... light and refreshing. I am going to make this with asparagus next.

I followed the recipe except I used red onions . I thought it tasted pretty good . No one else has ate any yet it's for supper .

Perfect summer salad! Left out the shallots cause I did not have any at hand but will add them next time. I grated the garlic instead of mincing it - I prefer it grated in dressings
